I need help with brunch tomorrow!!! please!

Here is my menu thus far and it just feels like something is lacking - what is it?

* Fruit centerpiece from Edible Arrangements (figured it was easier than cutting up fruit)

* Hash Brown Casserole/Quiche - one with sausage/pepper, one with ham/broccoli and may do a 3rd since leftovers will be consumed by my family

* Creme Brulee French Toast - 1 pan

* Cinnamon Chip Coffee Cake - bundt cake style, recipe on Hershey's web site and other places, uses their chips

* Wrap/Roll-ups with lettuce, ham, cream cheese on sundried tomato wraps

* Mimosas & Coffee to drink, and maybe tea if I can figure an easy way to make a large amount and put in my thermos to keep warm

It's at 10am. My kids will be off to school by 8:30am...so I will have some time before guests arrive but not a ton. I don't want to be cooking while I am entertaining...

* Also thought about a green salad but not sure it goes...

either a green salad or a fruit salad or a veggie dish. that center piece just counts as snackies...as an accompaniment to the coffeecake.
And you need someting that swims...shrimp, crab quiche, a plate of smoked salmon....something besides ham and sausage.
Skip the rollups and buy a chink of smoked salmon and serve that.....and a green salad....spinach with grapefruit and toasted walnuts.

A citrus fruit salad (like you get in a jar at the supermarket) would go with both the savory items and the french toast and it is already cut up for you. You could turn it into ambrosia by adding some coconut and maraschino cherries.

Your question is one that I have seen a lot of pond contractors get wrong. The hinges have to go at the bottom or the weir won't work correctly. If installed upside down the skimmer actually won't skim. In which case the door has to be removed to get it to skim at all. I have seen plenty of ponds where the installer installed it with the hinge at the top. Mike

Help! Planting 20 trees tomorrow and I need quick advice

I talked to my husband when he got home from work last night. We're not using any of those bags of soil. We're using all native soil. We've also decided to plant these trees over 2 days. He works second shift so we don't have all day to do it. He's just going to dig a hole in a part of our yard and then when he's done with it will fill it with some topsoil or something. Funny that someone brought up a tiller. We already tried that idea. Well, sort of. We tried to rent one from Home Depot earlier this week, and they said we couldn't rent it yet because it's too muddy outside and they don't want any mud getting on the machine. We told the guy we would never return the machine with any mud on it but he insisted no one can rent the tiller yet. If all we were doing was planting trees it would be one thing but once we plant we are committed to putting up vole fencing around it. We've already got all the poles put up. Where we are planting we can see vole trails everywhere. Not to mention we also have to stake these trees (I stake every tree I plant for 2 seasons) because they are going to be in the prevailing wind section of our yard. The trunks and branches on these 2 foot European Hornbeam fastigiatas are so tiny! They look like they could snap right off. I smiled to myself this morning when I re-read my original post. I was completely panicked when I wrote it. I'm calm about it now. We're planting half today and staking and fencing them, and then the other half tomorrow on his day off. It'll be fine. I see people on videos all the time dig a hole to plant a tree and put the dirt back in and have enough to backfill, but we never do. And we put every bit of dirt we dig out of the hole on a tarp so as not to lose any of it but we still don't have enough.

I think you are fine with the muffins/danish as a sweet offering, so no I don't think you need a dessert. Also, your menu sounds delish! If you wanted another marinated veg type thing, I make the following a lot and it is well received..... Marinated Antipasto 3 large carrots, cut diagonally into 1/4-inch-thick slices 2 large handfuls fresh green beans 2 cups broccoli florets 2 red bell peppers, roasted and cut into strips (jar is fine) 2 yellow bell peppers, roasted and cut into strips a 12-ounce jar peperoncini drained well 3/4 pound black or green brine-cured olives or a combination 3/4 pound marinated or plain bocconcini (small mozzarella balls, available at specialty foods shops and some supermarkets) 1/2 pound pepperoni or soppressata (hard Italian sausage, available at Italian markets, some butcher shops, and, some specialty foods shops), cut crosswise into 1/4-inch-thick slices and the slices quartered two 7-ounce jars marinated artichoke hearts, rinsed and drained well 2 cans Hearts of Palm 1/3 cup minced fresh parsley leaves plus, if desired, parsley sprigs for garnish Vinaigrette Dressing Â about 2 cups, use your favorite recipe In a large saucepan of boiling water blanch the carrots for 3 to 4 minutes, or until they are crisp-tender, drain them, and plunge them into a bowl of ice and cold water. Repeat for the Green Beans and Broccoli. Let the vegetables cool and drain them well. In a large bowl toss together the carrots, Green Beans, Broccoli, the roasted peppers, the peperoncini, the olives, the bocconcini, the pepperoni, the artichoke hearts, the Hearts of Palm, Vinaigrette dressing, the minced parsley until the antipasto is combined well and chill the antipasto, covered, for at least 4 hours or overnight. Sounds like a nice brunch. I do have a few other suggestions-if you like any of them-email me and I'll send you the recipes for each. I would suggest that with 70 guests-and because it's a meal that is best served really hot (eggs, French Toast, etc)..maybe you could set up food 'stations'-like one for beverages, another for egg/French toast, another for breads, sweets, another for sides. This would eliminate a large group gathered all around one table at once. Other menu suggestions: **Baked Salmon Loaf balls with roasted red pepper sauce **Cheddar Cheese Mini Biscuits..Blueberry Muffins **Oven Baked Egg Omelet (fluffy, creamy & cut in squares!) **Mini pancakes (made ahead & frozen until the night before) spread with a mixure of lemony cream cheese, sour cream & topped with smoked salmon ** Vegetable Lasagna? ** Using your store bought fruit chunks-why not place a variety of the chunks on wooden skewers (inexpensive by the bag at the grocery store), then poke them into the shell of an inverted watermelon shell..makes a colorful display! ** warmed cinnamon buns? ** how about a spaghetti salad-using angel hair pasta,sweet red pepper, scallions, cherry tomatoes, water chestnuts, artichoke hearts, hearts of palm, chick peas, chopped mushrooms, sharp cheddar cubes-all marinated in a catalina & italian dressing combined? ** Iced Coffee, Iced Tea w/fresh mint

Friend surprised me with an Edible Arrangement! That should be suffice for fruit salad. And I might add the fruit was so fresh and delicious!

What about bagels, lox, cream cheese, and onion? Can't improve on that.

I think you need some more protein, not just the eggs and bits of meat tucked into the wraps and quiches, and I agree with Lindac: fish. If lox or smoked fish isn't in your budget, consider tuna or herring.

But if your gang simply won't touch any kind of fish, how about some egg salad? It can be really special with a little mustard and hot sauce or curry powder.

Wow what you have planned already sounds like a feast to me!!! I guess maybe a green salad but really you have plenty already. How many guests are coming?

You do have a lot of food, but I always include a salad for a brunch be it garden or Ceasar. I also think that the Edible Fruit Arrangement is enough fruit.

I'm also a fan of seafood so that is just a personal choice. Salmon would be excellent.

I am surprised your kids have school on MLK day. I thought it was a national holiday everywhere.

Yes jojoco, it is odd that our kids have school, especially considering they had Friday off...not sure why they didn't just have Monday instead (for a teacher work day).

Brunch is over and went fine. I did make a green salad but didn't have time for 'something that swims'. I'm in the Midwest so nothing really swims around here except in a can. No time to run and get salmon but I'll remember that next time (I have to host again in 3 years so maybe I wont' remember!!)

Lots of compliments on Woodie's Creme Brulee French Toast.
I really liked the Potato Quiche - nice combo of green onion and swiss cheese.

The fruit was yummy also - chocolate covered strawberries & bananas in particular.

I have lots of leftover muffins and coffee cake, which will get eaten by DS's and DH (and me too!)
