Sourdough waffles, I must have done something right

So I started a sourdough sponge last night. This morning I decided to use it to make SD waffles. I modified KA recipe but had problem with my new dough whisk. For some reasons gluten began to climb the wire loops. I ended up having to discard the chunk of gluten then adjust the rest of the ingredients to make the consistency right. Used the Belgium waffle iron hubby gave me for Christmas. I was not sure how the waffles were going to turn out because of the adjustment. But they turned out pretty good. Very light and fluffy! I didn't know what I was doing but I must have done something right! Al
