I've got some phyllo dough languishing in the fridge that I was going to make apple strudel with, but I'm out of apples. I also plan on making roasted veggies this weekend, so I thought I could make some kind of vegetable pie/strudel with the filo dough, but I'm out of my element. Remember, not matter how easy you all say it is, I am seriously lacking in dough dexterity. I have a few questions?
Besides some tofu, should I put something in the roast vegetable filling to thicken it? Flour? Milk and/or eggs? I'm shooting for lowfat.
Should I do it up in a narrow rectangular casserole, like I do greek spinach pie? Can I do two small rolls and freeze one, or won't this freeze well. Living on my own, it takes me forever to eat a large casserole, no matter how yummy.
