The nearby thread on duck cookery stimulated my mind: I have read in M. Ruhlman's book on Charcuterie about using a duck breast to make 'prosciutto'. Looks very easy, but I'm a little uncertain about partaking of what is essentially raw poultry. I've used his recipe for duck confit, and the results were wonderful, so I guess I oughta trust the guy.
Anybody out there tried making this? It looks easy, and I have a cellar that's around 50 degrees this time of year, so I have a place to hang the thing.
