Wolf/Viking Gas Infrared Broiler v. Electric Broiler: Fish

Hi,

Dropout to post in the middle of running between appliance stores. Trying to decide b/t Viking AG and Wolf AG or DF.

The salesmen have been touting the benefits of the AG ranges' infrared broiler. I don't cook steaks, but I do cook thick fish filets (sea bass, etc). Would the infrared broiler be too much power/heat for fish?
