Hi Sherry - here it is!

Hi-Protein Honey Wheat Bread -readinglady
Categories : Breads
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 cups bread flour
2 teaspoons salt
2 envelopes active dry yeast
1 cup water
1/2 cup honey
1/4 cup margarine or butter
8 ounces cream-style cottage cheese
2 eggs
1 cup whole wheat flour
1/2 cup quick oats
1 cup finely chopped nuts
Generously grease two 9x5x3-inch loaf pans. Spoon flour lightly into measuring cup; level off.
Combine 2 cups flour, salt and yeast in a large bowl. Mix well. Heat water, honey, margarine and cottage cheese in a medium-size pan until very warm (120-130 degrees). (Margarine does not need to melt completely.) Add warm liquid and eggs to flour mixture. Beat at low speed until moistened, then beat 3 minutes at medium speed. Stir in whole wheat flour, oats and nuts by hand plus enough remaining flour to form a soft dough. (May need an additional cup or so white flour.)
Knead dough on a floured surface 10 minutes or until smooth and elastic. Place dough in greased bowl; turn to bring greased side up; cover. Let rise in a warm place away from draft until double in volume, about 1 hour.
Punch dough down; divide into 2 parts. Let rest on counter, covered with inverted bowl for 15 minutes. Cover; let rise until double in volume, about 1 hour.
Bake at 375 degrees for 35 minutes or until loaves sound hollow when lightly tapped. Remove from pans immediately; cool on wire racks.

I think this might be the one I was just about to ask for!
I remember that Readinglady posted a bread recipe that used up finely chopped nuts. My fridge is full of little jars of various leftover nuts. Carol, if you're here: did you have another one? I didn't remember cottage cheese as an ingredient....

I'm not going to be much help, I've never baked bread anywhere except Michigan. this comes from your friendly local Extension service though, and those people know what they're talking about: "Yeast Bread at higher altitudes: Basic recipes for yeast breads are reliable at most altitudes. However, since fermentation of sugar is faster at higher altitudes, breads rise in one-third the time noted for lower altitudes. When baking yeast breads, carefully watch that the dough does not rise more than double its bulk. Since it rises faster, the flavor doesnâÂÂt have time to develop. Punching down the dough twice instead of once will improve flavor as well as texture. Start checking for the first doubling in bulk after about 30 to 45 minutes. Check for the second after 60 to 75 minutes. Salt acts as a yeast retardant so donâÂÂt bake bread at high altitude without it." So, I think you can reduce the yeast even further, and watch that rise as LindaC says, and put it in the oven when it's "ready". Good luck, and just think of all the yummy "experiments" until it's the way you want it, LOL. Annie

Lisa, bread baking is addictive although I don't do it as much anymore because we don't eat a ton of bread. Just wait until you decide you want to try a sourdough starter-I become completely obsessed and even asked my friend to "babysit" it when I went out of town. As far as baking it free form, I don't see any differences in instructions except scoring the loaf right before baking. There are instructions for hearth baking which include using a steam pan and baking stones/tiles. I don't have the patience for that so what I would probably do would be to place it on a baking stone covered with parchment and mist it lightly with water before baking. More experienced bakers will probably have better suggestions. Lisa, Instant yeast vs. regular yeast from the book: "instant yeast is recommended because it can be added directly to the dough. Active dry yeast will also work, but it must be hydrated in warm water before it is added." I believe instant yeast is the same thing as bread machine yeast. I buy my instant yeast in bulk packages from Sam's club. As for the water, I think the chlorine can be a factor so that's why they say to use spring or filtered water. Please let me know how yours turns out! It really was good bread-it's a little crumbly but not dry if that makes any sense and the flavor is awesome. No bitterness or heavy wheat taste. I don't know how much it affected the final flavor but I did use white wheat flour which is a lighter flour than traditional whole wheat. I really hope some of you guys try this and let us know how it turns out! Tracey

I'm waiting for my pizza to get done. It's Lou's dough/sauce and looks wonderful. After dinner, if not too much wine, I'll post the recipe ... OK just found it on this computer. The recipe doesn't tell when to add the egg. I broke it into a small bowl, forked it and added it to the warm liquid. Also, put this in the bread machine. Here it is: HONEY WHOLE WHEAT BREAD INGREDIENTS:  3-1/2 to 4 cups all purpose flour  2-1/2 cups whole wheat flour  2 pkg. active dry yeast  2 tsp. salt  1 cup milk  1 cup water  1/2 cup honey  3 Tbsp. oil  1 egg PREPARATION: In large bowl, combine 2 cups all-purpose flour, 1 cup whole wheat flour, the yeast, and salt and mix well. In saucepan, heat milk, water, honey, and oil until a thermometer reads 120-130 degrees F (warm) Add liquid mixture to flour mixture and stir to combine. Beat this batter for 3 minutes. Then, gradually stir in rest of whole wheat flour and enough remaining all-purpose four to form a firm dough. Sprinkle work surface with flour and knead dough, adding more flour if necessary, for 5-8 minutes until smooth and satiny. Place dough in a greased bowl, turning the dough in the bowl to grease the top. Cover and let rise in a warm place about 1 hour, until double in bulk. Punch down dough and divide into 2 pieces. On lightly floured surface, roll or press each piece of dough to a 14x7" rectangle. Starting with shorter side, roll up tightly, pressing dough into roll with each turn. Pinch edges and ends to seal and place dough, seam-side down, into greased 9x5" bread pans, making sure short ends of bread are snugly fitted against the sides of the pans. Cover and let rise in warm place until the dough fills the corners of the pans and is double in bulk, 30-40 minutes. Bake in preheated 375 degree oven for 35-40 minutes, until bread is golden brown. Remove from pans and cool on wire racks. I like to brush the bread with butter when it's still hot from the oven for a softer crust.

Barb, here is Alton Brown's recipe, you could easily leave out the salt and any of the flavorings you don't like. The brown sugar adds a nice flavor, but it'll make the sausage stick if your meat is too lean, so watch it carefully. I often use dried herbs, although the fresh are very good used like this the dried ones are good too. If you don't want to grind your own meat, just get ground pork or ground chicken and use that. I like it with chicken a lot. Breakfast Sausage Alton Brown 2 pounds pork butt (2 1/2 pounds with bone), diced into 1/4-inch pieces 1/2 pound fat back, diced into 1/4-inch pieces 2 teaspoons kosher salt 1 1/2 teaspoons freshly ground black pepper 2 teaspoons finely chopped fresh sage leaves 2 teaspoons finely chopped fresh thyme leaves 1/2 teaspoon finely chopped fresh rosemary leaves 1 tablespoon light brown sugar 1/2 teaspoon fresh grated nutmeg 1/2 teaspoon cayenne pepper 1/2 teaspoon red pepper flakes Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes. Recipe courtesy Alton Brown Ruthanna that's a great idea with flavored butters, CC could use unsalted butter and add things her husband likes. I love your Tomato Basil Butter, that's good on a lot of things. Annie

Have you tried the King Arthur Flour website? You can google it, but I'll bet they've got something. My aunt used to get their printed catalog and you would not believe the different things they make and she was a big baker. If all else fails...
