A little while back I bought some annato seed at Penzey's, in order to make annato oil for a seafood stew I want to try. Lots of warnings online that overcooking the seeds will result in a bitter taste. So I took precaution, tried two batches and both times I found it bitter. One thing I did differently than recommended on the jar was to use EVOO instead of vegetable oil. (Recipes online called for olive oil.)
So here's the dilemma: First off, I've somehow managed to lose my annato. Is it worth going to Penzey's for more (they moved and are now like 20 minutes away rather than 5) or do I just use saffron in the dish. I've seen annato called "poor man's saffron" hence the question. Apart from bitterness and color, I didn't think the annato added much to the oil. Perhaps a little earthiness. Still wondering if EVOO was the problem...
