When a recipe goes bad

A few days ago my neighbor and I made a batch of pots de creme. The recipe was from my Southern Living cookbook and didn't require baking them. We followed the recipe to the tee (even using a candy thermometer). Well, they were gross. They were gritty and did not set up right. Some of the chocolate even solidified in the bottom of the cups.

I get really disappointed when a recipe fails. It makes me wonder if they really test these recipes first. Then I get mad because I wasted 20 oz of chocolate in these things. Makes me hesitant to try a recipe with pricey ingredients.
