another unripe acorn squash!

I look for the big orange spot. I check for a thick, dull rind. I heft it to make sure it's on the heavy side. And still sometimes I get 'em home, cut into 'em, and find 'em unripe, dang it!

This seems to be happening more and more, lately. I wonder if some farmers are harvesting too soon to save themselves some work...

>>Anyway, am I missing part of the secret to getting a ripe one?!?>>And, once it's cut, is there anything that can be done to ripen it?I'm annoyed about composting an unripe one. (And please don't suggest preparations that try to mask that unripe taste. I haven't found anything acceptable that can cover up that astringent lack of ripeness--it's so disagreeable to my tongue.)
