I should think any of those should be fine, adjusting cooking time depending on the fish and the thickness of the filets.

Snapper is one of my favorites. Were it me, I would pick the haddock as a substitute. It's meaty and mild, like snapper. Next to that, the cod.

Thanks. I will pick up some haddock as a lot of people say they really like it. Is there a huge difference between fresh and frozen? The store only had frozen.

Frozen fish is often water logged and mushy but haddock should be decent because the fillets are a bit chunky. The varieties you list sound like what I have available at Wal Mart in flash frozen vacuum sealed little packages and I often buy the haddock.
That said, I would thaw and drain exceptionally well on paper towels, blotting most of the moisture.

Ocean perch would be my choice as a Snapper substitute. It has a similar firm texture. It even has that red pigmentation. The main difference is size. Ocean Perch fillets tend to be small. I think you would like it in that recipe and the price is usually reasonable.

A good Mexican preparation for Snapper is Huachinango al Mojo de Ajo (Snapper With oil and garlic).

Gulf snapper is on the Monterey Bay Aquarium's Seafood Watch List as "Avoid" as is Hawaiian snapper except "Ruby" so it's good to make a substitution. :)

FOAS, I agree. It's too late for the snapper & your family will enjoy the meal. My point was though that if we make substitutions & don't purchase "Avoid" seafood...the fisherman will reduce their catch (hopefully). A few months back, I spoke with the CEO of Mystic Seaport about starting a seafood watch program based for our local species, perhaps in conjunction with the Monterey Bay Aquarium. They've already got the website to support a watch program. Darn shame what we've done to our waters. There's talk in CT of shutting down lobster traps! Serious talk. I expect it to happen within a couple years. Even our local flounder are on MBA's avoid list. :( We haven't had our marina flounder contest in several years due to commercial over fishing. My town (Stonington) has the last remaining commercial fishing fleet in CT and a unique link to an industry that has for more than 250 years been a major part of CT's maritime heritage. Mostly, the fleet is a local family with a 5 generation business. I don't expect we'll have many more summers with the annual "Blessing of the Fleet" festival. Ahem. Enjoy the snapper. It's one of our favorites.

In my experience, snapper means a small blue fish, not a red snapper at all. But that's my surf fishing relatives speaking.
so before you go damning those who eat "snapper" find out what kind of snapper they are talking about.
I don't find frozen fish "often waterlogged and mushy"...perhaps the fish was old when frozen?
If your recipe means red snapper....then ocean perch would be a good substitute id it means blue fish, then I think the best substitute would be salmon....another oily flavorful fish.

Linda - Yeah, here locally "snapper" is baby blues. Red snapper is something you hope you get when the store labels something red snapper.

I've never known there to be commercial fishery for Snapper Blues. I've never seen them for sale. Unless it is an unusual recipe, it would be for Red Snapper.

I think Ocean Perch would be a good substitute for Red Snapper. The best substitute for Snapper Blues would be Tinker Mackerel, another juvenile fish and one which is oily and flavorful. But you will find neither Snapper Blues nor Tinker Mackerel in your store.
