The Cabbage Thread

After checking out the thread LPink started on local produce that may be available now (depending on your locale) it seems that many of us found cabbage on the list.

I have a couple of T&T recipes I use when I am making cabbage, but I would love to get some more ideas.

Hungarian Cabbage and Noodles


1 lb. bacon

1 tbsp. sugar

1 1/2 tsp. salt

6 c. cabbage

4 oz. noodles (about 3 c. cooked)

1/2 c. sour cream

Paprika

Cook bacon until crisp, remove from skillet, drain and crumble. Stir sugar, salt in bacon drippings in skillet, add cabbage. Stir until cabbage is coated, cook over medium heat until cabbage is tender.

Combine cabbage, noodles and bacon. Put in a casserole dish and cover. Bake slow in an oven at 325 degrees for 45 minutes. Sprinkle with paprika and return to the oven for 5 minutes more.

0 Point Weight Watchers Cabbage Soup Recipe

3 cups nonfat chicken broth

2 garlic cloves, minced

1 tablespoon tomato paste

2 cups chopped cabbage

1/2 yellow onion

1/2 cup chopped carrots

1/2 cup green beans

1/2 cup chopped zucchini

1/2 teaspoon basil

1/2 teaspoon oregano

salt & pepper

Spray pot with non stick cooking spray saute onions carrots and garlic for 5 minutes.

Add broth, Tomato paste, cabbage, green beans, basil, oregano and Salt & Pepper to taste.

Simmer for a about 5-10 minutes until all vegetables are tender then add the zuccini and simmer for another 5 or so minutes.
