Report on my new 48inch Blue Star

We deliberated about the range choices very seriously. Ultimately my friend, a world class professional chef kept pushing the high btu burner, saying nothing else comes close, and burners of lesser btu are wussy.

We custom designed the top layout, picked a special color and ordered the 48" range with 2 ovens.

It was a heck of a process getting the range delivered. it arrived slightly damaged. We called the dealer, he said it wouldn't be a big deal to repair it, and so we chose to accept delivery with the understanding that it would get repaired. Ultimately the frame was damaged. A new one had to be ordered. Blue Star did indeed deliver another new custom painted range.

Lesson learned, if it's damaged do not accept it!

We absolutely love this range. The high BTU's rock when wokking or boiling water, or doing just about any cooking. The lower burners are still have radically more btu than any range we ever had. The cast iron grates are easy to throw in the dishwasher, though over time they accumulate some character, which is perfectly fine with us.

Wife really wanted a french top, and they accommodated a special request of us. This thanksgiving we used the french top endlessly. Gravies, simmering stocks, warming. It was awesome to have a bunch of pots crowded on and around the french top.

The ovens are alright. Small oven needs to have the thermostat adjusted and I have not bothered to figure out how to do it. If we put in full half pans, they tend to block heat from circulating, though they do it fairly well into the rack-mount without any racks, which is really nice.

The big oven will hold 8 half pans baking cakes and roasting veggies with fairly even heat distribution if the convection is used.

They both take a few minutes to get up to temp. We have not had any issue with door temperature, though we don't hug the doors too much...

Broiler kicks ass. It could be a little bit bigger. It has a learning curve on how to best use it. in other words, don't use your best steaks the first time...

Installation was a bit tricky given our tight tolerances. The install manual was not quite accurate with certain measurements, but it was nothing we could not handle.

On either side of the range we have granite counter-tops, and use the same black granite for the back splash. We ordered extra paint and had the hood we purchased (different brand, and perhaps subject of another post)painted the same color. it is a stunning look.

Speaking of hoods, DO NOT UNDERSIZE THE BLOWERS. This range can put out a ton of heat and smoke. You will regret getting some measly cheap hood.
