Speaking of brownies

I'm posting here a recipe I just posted in the brownie thread, and wondering if anyone can tell me by how much I'd need to increase it if I wanted to go from 13 x 9 to a jellyroll pan (I bake for work all the time and these brownies are just so loved that I have to sneak around with them and pick and choose). I'd like to be able to make a larger quantity to share with everyone. Thanks!

Brownies 13x9 pan

2 cups sugar

4 eggs

1 cup flour

2 tsp. vanilla

4 squares unsweetened baking chocolate

2 sticks (1 cup) butter or margarine

Blend the first four ingredients with your mixer; melt the chocolate and butter together, add to the first mixture and blend thoroughly. If I use cocoa, that goes in with the flour.

Pour into prepared pan and bake approx 30 minutes at 325.

Hi Scott, I've figured this out in the past for myself for other things - a 15x10 jelly roll pan is about 1-1/4 times bigger than a 13x9 pan. So I would increase your ingredients by 1.25

Brownies 15x10

2-1/2 cups sugar
5 eggs
1-1/4 cup flour
2-1/2 tsp. vanilla

5 squares unsweetened baking chocolate
2-1/2 sticks (1-1/4 cup) butter or margarine

My Brownies get rave revues.

2/3 cup cocoa
2/3 cup canola oil
2 cups sugar
4 egg
2 teas. vanilla
1-1/4 cup flour
1 teas. salt
1 teas. baking powder
1 cup chopped walnuts

Combine cocoa and oil.
Add sugar, eggs and vanilla
Add dry ingredients and nuts.
Spread into greased 9 X 13 pan.
Bake about 25 or 30 minutes at 350

I don't bother getting out the mixer for these. Mixes easily with a wooden spoon.

I like to put half the nuts in the batter and sprinkle the remaining on top before baking.

Hello to all! My box is almost ready. this is a fun project. I don't think I could send or receive any plants due to cold here, but maybe trade some in spring! I am trying to overwinter some geraniums in my indoor greenhouse ( in hubby's garage) I seem to be having fairly good luck. We too have 3 dogs, they are always in the greenhouse with me and the garden also. They eat as many veges as my husband and I, they ALWAYS get the first asparagus because they walk down the row and nip it off. Off for now, keep your chin up it is almost spring!!!!! D

Hooray, I have DSL and it works (for now). It only took 10 hours and 4 calls to AT&T. Ahem. Anyway, pictures should be a LOT faster to load, it took me nearly two hours to take the ones on Photobucket and put them on this thread. That's after the 4 hour time it took to load them from the computer to Photobucket! So, expect more pictures, LOL. Annie

I was also going to suggest a royal icing type thing. I like this one because it is very glossy from the corn syrup. Sugar Cookie Icing "This icing dries hard and shiny and the colors stay bright. Choose as many different food colorings as you desire." Ingredients: 1 cup confectioners' sugar 2 teaspoons milk 2 teaspoons light corn syrup 1/4 teaspoon almond extract assorted food coloring Directions: 1. In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup. 2. Divide into separate bowls, and add food colorings to each to desired intensity. Dip cookies, or paint them with a brush.

Yoo hoo golddust ~ Welcome to the other side LOL. I'm Nora from mid New York State. I've been married for 20 years and we have a 26 yo DS. DH and I got together when Eli was a little over 4 years old and we married when he was six. DS and his GF live in a cottage on our property, which is a blessing. We love to renovate anything that isn't nailed down and it seems that we're in a constant state of flux (no pun intended considering your metier). We also love to garden, which we do with fervor, though not always with as much success as we'd like. The earth tells us what it needs and most of the time we pay attention. But when we don't we learn early on that we should have listened to Mother Nature. Welcome!!

scott, just make 2 batches.
If you try to make brownies in a half sheet pan, the outside edges will get dry before the inside is cooked enough.
Certain things need to be made in a smaller pan...brownies are one....and corn bread is another.
