Wild Rice Risotto?

Joyce's thread about making risotto inspired me to try this.

Basically risotto rice, Arborio rice has no taste, all the taste comes from other ingredients. Arborio rice just provides the texture, the mouth feel and the vehicle to carry the tastes.

On the other hand, real wild rice is different. It actually has a distinct flavor. I thought it will be interesting if wild rice can be made into risotto. The problem is wild rice does not give out much starch to make the characteristic risotto. Wild rice cooks very loose, firm and non-sticky.

In the various techniques I played with, I finally was able to turn real wild rice into very much like regular creamy risotto.

There are many wild rice risotto recipes you can find, but it seems they all use Arborio rice to provide the starch. My version uses only wild rice.

Sous vide chicken, Okra and wild rice risotto made a very enjoyable dish.
