The pix are wonderful! I loved Italy. We went to Rome and the Amalfi Coast. I would go back i9n a heartbeat.

Oh my, the pictures ARE wonderful. I'll admit, I really liked that fish looking right into the camera best, though. LOL

What wonderful produce too, it looks like an amazing place to visit.

Thanks Shaxhome. Very good question. There are very important benefits for the sous vide method. 1. Less meat shrinkage, may be 5% less. This adds up to a lot of money. 2. Cheaper cuts of meat. I recently did London broil ($2.49 a lb) medium rare, and tender like expensive steaks. This will save a lot of money also. 3. Precise quality of meat done-ness. Rare, medium rare, medium ----- it is all up to you to set the temperature, nothing can go wrong. No-overcooking or under-cooking. Fool-proof. 4. Makes no difference how big the meat is, from one thin breast meat to a whole turkey. Set it and forget it. 5. Makes no different starting temperature, from frozen to room temperature. No need to poke around with a probe thermometer. 6. Re-heating without over cooking. 7. No need to "rest" the meat. In this case, the steaks were frozen, I put them in the sous vide cooker with a little seasoning, set the temperature at 129 F for one and 133 F for the other. A few hours later, 5 minutes before meal time, fire up the cast iron grill to red hot and grilled the steaks 1 1/2 minutes each side to sear. Perfect steaks. Perfect hot steaks. bri29... Are you sure you can't tack on an extra couple of vacation days on those work trips? That's what I used to do when I traveled for work (drove my boss nuts!). I don't know if it would work for your schedule, but, if you haven't already, I'd highly recommend staying overnight in Venice. The evening stroll along the canals, when the large tour groups are gone, is magical. Compumom... You're WAYYYY overdue for a visit. The apartment stays are not as difficult to arrange as you might think. Though some require a week stay, especially in the high season, there are many more apartment owners who will rent for 3 or 4 nights. It does take much more planning time to find the right place though. As for the agriturismos, many of these are run like a small hotel or B&B, so you can stay even one night if that's all you can allow for your schedule, but to really get the experience, again 3-4 nights to me is about minimum. What we do is pick a place based on location that allows us to do day-trips from that spot. It really saves on the wear and tear of packing and unpacking, and too much hotel/restaurant food. Eileen...there's always a 20th anniversary trip?! ;) Barnmom... I think it's a combination of tons of walking and numerous espressos. That might be the true key to the "mediterranean diet" Dlynn... That's one thing I like about Italy; there are plenty of options that are a great alternative to fast food, even if you're not a gourmet eater. Annie... Hand gestures, shrugs, smiles all go a long way toward communication. And people are mre than happy to communicate in whatever language works. Grazie, everyone for the kind words!

They're here year round, Ronnie. I used to feed birds all year until the summer a bear killed my dog. The game warden said I was encouraging bears by hanging bird feeders, and so now I stop feeding in April and resume in November. I miss seeing the migrating flocks! Some people feed all year and take the feeders in at night, but so far I haven't tried that. I'd probably have to battle a raccoon for them if I waited until dark.....

It's fun to see the pictures and see the coons and cats eating together but I never met a coon that I really liked. They are mean and vicious when they want to be and will kill for the sport of it. I have had them raid my chicken house and just cause a melee leaving a wake of dead chickens..night after night...It is very heart breaking to have to endure their viciousness.......once they find your place, they will come until you kill them or there is nothing left for them to kill or eat..they will eat a bit and then go chase another. I have found that they can get into just about anything that a human being can build. I had a Mama duck that decided to build a nest and set on her eggs. When I found her, I tried to secure her as best I could and managed for nearly the whole period of time but before the hatch, they got to her...killed her and tromped through destroying most of the eggs....You can stand there watching them and they will shoot a bird at you they are so reckless...shoot at them and in 5 minutes they will come back and say, let's try that again...........

Now I am mentally planing a trip to Italy and I SHOULD be doing so many other things.

We went to Venice, Rome, Naples and Capri. I loved every minute and would go back at the drop of a hat. Planning on going to Germany and Switzerland next year (fingers crossed!).

Boo Hoo, I can't see the pix at work. I'll have to look at them tonight at home! I will be vacationing vicariously through your pix, I guarantee it! Italy is where I want to take my next vacation.

(Well...after PFPP, of course! LOL)

Oh it's been a long time since I was in Italy and I really love it there as well. Aren't the food markets great!
Those grey monkfish were also in the fish market here when I went to buy salmon the other day. I don't think there's any other fish I've seen here that is uglier than those LOL.

Was that a Chinese dinner I see there as well? I bet you enjoyed the pasta!

Yep we ate at a wonderful place called Chinatown restaurante. Great food and the place sits right on the canal in Venice. I had some of the best pasta and gnocchi I have ever had in my life! The gelato and panini's were out of this world too. We had pizza at this place called Trattoria Pizzeria A.Spinosi by the vatican. DELICIOUS! I had never really tasted pepperoni till I went there. I have a couple of pics from there but I have to download them still. Give me a few more days and I will update it. If you have a chance check out my other albumn with a few pics from the trip!

I checked out the other photos and they are really lovely! I never did make it to Venice.....(oh those gondolier fellas are sure nice too aren't they)....but I did enjoy visiting Florence and seeing the galleries. The scenery all around there is so beautiful. I enjoyed Rome because it was possible to see the main sights on foot whereas driving a car there was h*ll LOL.

I finally got the last couple of photos into the albumn. The last pizza place was our fav. The pic in no way does the pizza justice! The best I have ever had!

Your pictures are beautiful! I could have nightmares about that ugly fish but the pizza looks just incredible, actually it all does :)
