Ive gone target shooting before, but I was really looking forward to duck gumbo! We got to Walmart to purchase one day hunting licenses - ooops - $200 EACH. On to Plan B, which was our touring around with Karen, keeping her out of the kitchen, LOL. I have to say that the Huevos Rancheros, for our first breakfast, were delicious. DS #2, my PICKY kid, ate the entire plate. Karen will share the link for the recipe, my brain didn't retain it. I didn't get a picture of everything plated, I thought someone did, ACK! This is the ranchera sauce. Loved it. The second morning she made us grits with smoked gouda and scrambled eggs. I have been dying to try properly prepared Southern grits instead of guessing from a recipe! Once again, PICKY DS #2 ate them all (I got his scrambled eggs). Now I have an idea how to proceed in my own kitchen ! Grits and eggs: Dinner photos from the Mediterranean restaurant: Lots of fish dinners! I cant remember the names! (DS #2 is following my tradition of reaching fingers in the photos, no polish sorry) Karens home is absolutely beautiful and guest-friendly. Hey I got to sleep in the same bed as Sharon and Clive, LOL. I wanted to sit out on the porch where Peppi sat and enjoy the river view but it was raining. My only complaint is I didnt get to spend enough alone time with Karen. Come on out to California!

We moved last March after 30 years in the same apartment. It had an eat-in kitchen and plenty of storage space for kitchen supplies. An adjoining laundry room was a repository for the overflow of serving, cooking, baking, and linens. I had tons of gadgets as well as multiples of sizes of equipment. Down-sizing big time allowed me to rid myself of lots of stuff. All the older pots, except the stock-pots and a few I couldn't part with, gave way for a new set of Cuisinart. It was very liberating to give things away. Who needed a green bean Frencher? 3 mellon ballers? 4 zesters? 5 old plastic colanders among other things? The organizer who helped me never cooked so she really rolled her eyes when she asked me if I really needed some of the items. She suggested that I box any random items and if not used, should go bye-bye in a year. The year has come and I haven't used but a couple of the dang things...out they will go. I bought new dishes and glasses too and other than a few all white day-to-day plates from the Pottery Barn, the old ones have been handed out. I had, among other nonsensical things, 12 individual au gratins, a dozen salt cellars, half again as many porcelain place markers. It was endless. Linens for every season, numbering between 8 and 16 each of place mats and napkins. Silicone: I have one silicone strainer and it collapses too easily to make me comfortable. I have also have a spatter cover with a separate handle which I detest, and a small microwave steamer which I like but I worry about the contents spilling out when I remove it from the microwave situated over the oven. I think the bottom line is: less is more It is easy to get caught up in the attractiveness of a new item, but basically, what does a good cook really need? Keep it simple. Bubbe PS I have to heed my own advise in my country home..It scares me to think what's lurking in the back of shelves and in boxes.

When I was a small child...until I was about 5 years old...my grandmother lived in the house my great-great grandfather built between the beach and the marsh of the Southern Maine coast. He'd bought a house, reversed the plans, and added a whole extra house worth of a wing. One side faced the ocean, and one, the marsh. They made it into what would now be called a bed and breakfast, I guess, and their guests were hunters in the Fall and bathers in the Summer. Oh, and they served 3 meals and tea every day. They being my great-great grandma and her maid/girl Friday (and my grandma, once she got old enough to help). I don't know what their average guest load was, but I do remember seeing a picture that had been used as an advertising picture post card with the crowd of guests out in front of the Woodbine Cottage...there had to be at least 30 people there. I remember my grandmother telling us how she used to have the chore of picking the meat out of the lobsters. The skin on her hands would turn red, start cracking and sometimes bleed (I don't know why lobster shells do this, but having picked the meat out of 3 at one point, I can believe her). This, so they could put big bowls of lobster meat down the middle of the table for the guests to help themselves. See, lobster at that time was dirt cheap, and for my great-great grandfather, who had his own boat and traps, an economical way to stretch the food costs associated with feeding the guests. My poor grandma still got a flash of anger in her eyes some 50 years later, when she related how the guests would put their cigars out in the bowls containing the remaining lobster when they were done with dinner. They baked all their own bread, made all their own pies and sweets, in fact, cooked everything from scratch...and a far more difficult scratch than people of our generation cook from, if they do! On a WOOD stove/oven. Without a REFRIGERATOR, let alone a dishwasher. In the Winter, they shut down the entire ocean-side wing, and lived in the original house to save heat. I have only the hazy memories of a young child, but I remember that kitchen as small. And as y'all know, generally the things of childhood are usually smaller when visited as an adult. Naturally, by the time my grandma was mistress of that kitchen, with grandchildren underfoot, more modern appliances had been installed. But there was still a narrow, dark stairway going down into a cellar in one corner (I assume that was the root cellar) and a small closet with a toilet in it in the other corner. I don't know what the use of it was before they put a toilet in, maybe a pantry? There was a kitchen table, where we ate, and a window seat (probably a storage chest) where my brother was bedded down after he had his tonsils out, so that he could eat with the family (he got ICE CREAM while I had to eat boring old chicken, potatoes and peas :( Funny the things you remember). With about 6 people around the table, I do remember my grandma having to sidle around the table to serve things, which paints a picture of how small the kitchen was. I have lived with and cooked in a number of small kitchens in my life. The smallest was in a condo I rented, which was called a "junior one bedroom", meaning that it was a studio apartment with a small bedroom tacked on. I could literally stand at the stove stirring a soup, reach over to the sink on my left for some water to add if I'd let it boil down too far, and pivot on one foot to open the fridge behind me to pour myself a glass of wine to sip while I cooked. And yet, you do learn to make do with what you have, if you like to eat well. I cooked a 5 course Japanese dinner for 6 people once in that tiny kitchen. You just learn to prep all your ingredients before you start actually cooking, and you sit down and plan your timing carefully before you begin, picking dishes that can be made ahead or partially ahead, using the minimum of last minute pots, pans and dishes. Yes, our grandmas and great grandmas generally made simpler dishes than we might now, but those simpler dishes were more difficult then. No (or very few) convenience foods, prepackaged mixes or instant ingredients. Recipes weren't as precise either, they couldn't be, because ingredients, measurements and temperatures weren't all that precise either! I shudder to think of trying to bake a loaf of bread or a pie in an oven heated with wood or coal!

I've read it is not good for cheesecake but I don't make cheesecake anyway. I have seen recipes for cheesecake using it in Cooking Light magazine, but I dunno if the recipes are any good. Probably not good in danish and the like either. I use it mostly to spread on bagels and toast and english muffins, in which case it tastes just fine. I top it with a dab of homeade jam, yum. Great with lox, since that has a strong taste so I don't miss the extra taste for that application. Fine with those dream eggs, because they were flavored with the herbs anyway, and the neufatchel just added a wonderful creamy texture, even with 1/3 less fat. Since cream cheese is almost pure fat, 1/3 less doesn't make it a diet food by any means, but I like it just as well if not better than cream cheese for what I use it for, so that's what I buy for the calorie savings. I don't mind it in party spreads either. Spread mixture on heavy brown bread and cut each sandwich into 3 or 4 pieces desired shape. Make at least the day before serving. Cover and refrigerate with damp paper towels on top of sandwiches so they will stay moist. Pour mixture into greased 6 inch springform pan. Bake at 350 for 335 minutes. Cool completely and remove from pan, heat remaining jelly and pour over top of cheesecake. Serve with crackers. Note: I made a double batch and baked it in a round cake pan with a "releaser" bar that spins around the bottom to prevent sticking. I just dumped it out and spread the jelly on the bottom, no one notices because it’s covered with jelly!! I use my own home canned Habanero Gold to make this stuff, and I'll be making 8 or 10 of them for that wedding in May. Somehow I just know I'm going to be eating some of them myself, and I'm going to experiment with making one with a fruit jam instead of the hot pepper jam and see how that works, the bride wanted something "sweet", she says "only the guys will like the hot stuff". DH and I went out today on a chicken coop tour of East Dallas. (which was lots of fun, but a whole nother topic) Then I had to clean the kitchen in order to cook in it. But, my little grandson (a month away from 3 yrs. old) and I did get started on Nate's carrot cake cookies, but since we didn't finish making the dough until an hour before his bed time, and the dough has to chill at least an hour, it'll be tomorrow before we bake them and do the cream cheese part. It doesn't matter. Both DGS and I had a great time mixing up the batter. He got to taste the flour, the sugar, the butter, and all the other ingredients as they went into the mix.
