Can we talk kugel?

I made carrot zuchinni kugel today. My oven suddenly came back from the dead! Anyway, it was good but not perfect like my bubbe and aunt make. Perfect kugel IMHO should be on the dry side and crispy on the ouside, soft and flavorful on the inside but not mushy. Mine was a tad mushy and only crispy on the sides, and bottom, not the top.

I made a couple of alterations to the recipe, which came from Mollie Katzen's "Enchanted Broccoli Forest." It said to salt the zuchinni and let sit in a strainer for 15 min. I salted it and let it sit for half that amount of time, I work full time and couldn't wait. I pressed a lot of juice out of it but apparently not enough. I also used two eggs instead of one and a half, but the eggs were so small I figured I could get away with it. Butter on top, and at the very end, some parmesean which was my addition. Just a smidge. Like I said, good but not perfect.

So, here's the recipe. What are your kugel tips and what kinds do you make? I've only had noodle and this yellow squash kind. This was a mix of carrot and squash. I'd like to try spinach. Is matzoh meal better than bread crumbs? How do you get it crispy and dry on the outside, particularly the top?

Carrot-Zucchini Kugel

(I made a half recipe)

6 cups packed coarsely grated zucchini (3-4 squashes)

3 cups finely minced onion

3 TBLSP butter (I used olive oil)

3/4 - 1 tsp. salt

3 packed cups coarsely grated carrots (~5 med. carrots)

3 large eggs, beaten

3/4 cups matzoh meal or fine breadcrumbs or wheat germ (I used bread crumbs)

6 TBLSP flour

1 tsp. baking powder

Freshly ground black pepper

Dots of butter for the top, about 2-3 TBLSP.

Spread the above mixture into a well greased 9x13 inch pan. Bake 1 1/4 hours, uncovered. I baked it for about 55 min. since I was making a half recipe in an 8 inch pyrex pan.
