Do you use the 'fancy' oven modes?

Last night I downloaded and read the owner's manuals for the Dacor, Wolf, and Miele ovens. It left me wondering if those of you who have them use the "extra" modes that come with the oven.

In my current oven I use Broil, Bake, Convection Bake, Time Bake, and Probe temperature on a regular basis. I am glad I have all of those.

But I am wondering if I would use (and find any diffference) with Convection Broil, Surround Bake, Intensive Bakem Convection Broil, etc. I would be very interested in hearing your experience.

Other modes like Dehydrate and Proof I can do in my oven now. I just set the temperature.

Thank you so much for the help. (Makes one wonder how our mothers bought appliances before the Internet.)
