Wolf 36' Rangetop - All burners or grill

I was planning on a Wolf 36" rangetop with 6 open burners. I was questioning if it was worthwhile on a rangetop this size to get a grill or forgo it. I have an outside grill but not practical in the winter. Not sure how much we would or would not use it or if I would miss not having the extra burners when necessary. On a 48" rangetop this would be more of a no brainer.

I don't have an answer for you but I am thinking of the
36" range with a griddle. I do wonder if the 6 burners
would be better.

A lot of people don't like using the grill, especially for meats, because it's heavy, a bit hard to clean, and makes smells, even with a good hood. On the other hand, the Wolf one is supposed to be the best. Since you can't use your outside grill in Winter it might be really worth it, even if you only use it a few times a month.

There have been a lot of polls on number of burners here and few people use more than 3 at a time, at least very often. What they like the 6-8 burners for is having more front burners.

Buy the one which has the knobs that feel the best to you or looks better. Both pretty much the same for cleanup. Wolf has more cache FWIW.

I have a couple griddle overlays on six burners and am very happy with that. I do from time use all my burners. I would look at the properties of the metals and see what would fit the way you cook. I like that with the add on you could change the griddle if you wanted to use the different metals with different properties. Some differences in the built in and add on-- The built in may be thicker than the add on but you would have to ask as they may very brand to brand. The built in is often made of steel. Because steel has poor heat transfer qualities, this will take longer to heat and not be as nimble if you want to change the temperature of the cooking surface. It will be more subject to hot spots. If it is thicker, it will take even longer and be take longer to change temp. It will hold much more heat for searing and retain heat longer though. Most have a surface that will season over time and become non stick like a cast iron skillet. I think Thermador has some other finish on theirs. Some of the overlay griddles are a little bigger as wide as 15 inches. There are also some ranges that come with an add on griddle specific to that range that fits and seats a little better than the regular add ons. With add ons, you would have your choice of metals, usually between steel, cast iron, porcelain covered cast iron, nonstick aluminum and uncoated aluminum. Steel and cast iron are poor conductors of heat so would behave as described above. Some people like that there tends to be areas that are different temperatures because they can use it to their advantage. These will both take a seasoning fairly easily. For being add ons, they are very heavy to move around. The porcelain covered cast iron will not really take a seasoning very well. Aluminum griddles have excellent heat transfer so heat very evenly throughout and are quicker to respond to changes in heat. They do not hold as much heat though. Aluminum is also much lighter weight if you have to move it. Bare aluminum will take a seasoning but require a little more time to develop. We have a 36" range with a grill. When the weather is nice (here in MN) we grill outside. Maybe we use in indoor grill 12 - 15 times a year. It's work to clean (I use a wet paper towel and tongs when the grill is really hot). Also you are going to need a really good exhauster. Our's is about 1400 cfm The rest of the time we use the SS Grill cover. Which comes in real handy when we are cooking. It's also great to have a 12" space between the left and right burners. I don't know what the cost difference would have been.

What is the CFM for the hood your wife likes? W/ Wolf gas, I would suggest at least 900 CFM. What I don't like about that hood is the MESH instead of BAFFLE filters. Baffles are so much easier to clean. --- Suggestion: get a 42" wide hood, so that gives an overhang of 3" on either side of the range top, which helps capture in a lot more steam (less damage to the side upper cabinets). My DH has been caught w/ the induction cooktop steaming away, when he's preparing his morning coffee, not remembering just how quickly water boils on induction. ----> can I persuade you to consider INDUCTION cooktop? I love my Miele 36". --- May not apply to ALL Broan, but my gf's Broan hood is wicked loud, so loud that she hardly turns it on. --- Remote blower = more expensive, when I was researching for one to go into my 42" copper hood. So I switched plans and went with a 42" Kobe 1100 CFM. good luck, Amanda

I like having the extra burners (we have the 6 burner AG). Most nights don't need the extras, but I really wanted them for marathon soup or tomato sauce-making sessions, and when cooking large multi-pot meals for dinner guests.

Our grill is on our deck, right outside the sliding glass door next to the kitchen, so unless it's very windy (the flames blowout), or very, very bitter cold (our Ducane is not a super-hot grill), we grill on our outdoor grill year round--at least DH does!!!

Like you said, if we'd had room for the 48" or 60", that would be a different story!

I'm probably in the minority, but I just like the idea of grilling outside. It's more of an emotional response- like comparing ice skating on a frozen pond surrounded by a snowy landscape with skating on an indoor rink. The latter just doesn't "do it" for me even though the ice is probably in better shape.

6 burners means you can comfortable put three big pots (or two pots and a saute or fry pan) on the range without shuffling. That to me is a huge advantage. With a 4-burner, you're limited to two big pots and the others generally need to be 8" or smaller. Personally, I'd get a beautiful cast-iron griddle and use that over "dedicating" 1/3 of my range to a griddle.

Taking myself out of San Francisco where I can grill outdoors most any evening, I'd be tempted by a "real" grill that actually could sear. I have read that the Wolf is better than most, but have not tried it. It will require a much bigger hood (flow-wise, and possibly physical size).

Then again, I see pictures of people firing up their outdoor charcoal grills in the snow, so I may be more with cat_mom on that. (Disclaimer -- I am a Kamado user that should be taking out stock in Lazzari charcoal.)

We have Wolf with grill + 4 burners as well as a NG Weber outside. We prefer the flavor of the Wolf for grilled meats, and use it when there's inclement weather or severe cases of laziness. We've found a 600cfm VH to be adequate for exhaust and opposite to the above poster no issues with smells. There are issues with the Wolf grill (cleaning, relatively small size and a bit of a learning curve), but I'd buy it again. While very subjective, on a snowy evening grilling some lamb chops inside, a glass of wine and chatting is something we look forward to.

I've never missed having two more burners, but we rarely have any more than a stockpot and a couple of pans working at the same time.
