We got our first big freeze of the year Sunday night (it was literally an Arctic blast!), and I was compelled to go out and give the kiddos a pep talk before the storm hit. I dragged the plants in pots into the garage and told them that they could go back outside on Wednesday, when it would be warmer. They looked so sad as I closed the garage door! Then I did the rounds in the beds, telling all the Zone 8 guys to hold on and be strong. Now they are all covered in snow, poor kids. Brrrrrr.

Brad - something else occurred to me this morning. You've mentioned health issues that prohibit you from having too much salt. And you've also mentioned using the packaged onion soup mix in several dishes. Something occurred to me that might be a good solution. Penseys offers two types of dehydrated onions. One of them is called California Toasted Onions. I think these onions might provide the flavoring you find appealing in the onion soup mix - WITHOUT any sodium. My mother has heart issues and cannot have any salt. For years she also made many recipes that contained the package of onion soup mix. I bought her a package of the toasted onions from Penzeys and it is a great substitution. Do you have a Penzeys near you? Of course Penzeys sells on line also. However, a trip to a Penzeys on a cold winter day might be a really fun thing for you and your Mom to do. All of their seasoning and spices have a sample jar you can smell. Jessica, I've also made a chocolate beet cake, although mine didn't have the spiced creme anglaise that this one has, which sounds like a really nice addition. Other than that, our recipes are identical. Oh, the cake is very good, really it is, but I'm not sure it's all that healthy, LOL. Chocolate Beet Cake From Straight From the Farm 1 cup butter, softened, divided 1 1/2 cups packed dark brown sugar 3 eggs at room temperature 2-3 oz. dark chocolate 5 medium beets (2 cups pureed) 1 teaspoon vanilla extract 2 cups all-purpose flour 2 teaspoon baking soda 1/4 teaspoon salt 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg confectioners sugar for dusting Make the beet puree by trimming the beets and simmering them until tender. Drain the liquid and cool the beets (you can run water over them to cool them off.) Slide the skins off, then place them in a food processor or blender and puree until smooth. Let the puree cool slightly before using it in the cake. Cream 3/4 cup of the butter with the dark brown sugar in the bowl of an electric mixer, then add the eggs one at a time, mixing well after each addition. Melt the remaining butter together with the chocolate, either in the microwave or in a double boiler over simmering water. Cool slightly, then add the chocolate mixture, beet puree, and vanilla into the butter/sugar mixture (it may look separated at this point.) In a separate bowl, whisk together the flour, baking soda, salt, cinnamon and nutmeg. Add the dry ingredients to the bowl with the wet ingredients and mix well. Pour the batter into a greased and floured 10-inch springform pan; bake at 375 degrees F for 60-70 minutes or until a toothpick inserted near the center comes out clean (I started checking around 50 minutes.) Cool the cake in the pan 15 minutes before unmolding and removing to a cooling rack; cool completely before dusting with confectioners sugar. Spiced Creme Anglaise 1/2 cup whole milk 1/2 cup heavy cream 1/4 cup sugar 4 large egg yolks 1/4 teaspoon cinnamon 1/8 teaspoon grated nutmeg 1/8 teaspoon ground ginger Set a bowl over ice water and have a strainer nearby youll want this ready so you can stop the sauce from cooking when its ready. Whisk together the egg yolks and sugar and set aside. Combine milk, cream, and spices in a sauce pan and cook over medium heat just until the mixture starts to simmer. Whisk some of it slowly into the egg yolk mixture, then slowly add the rest of it while whisking. Pour the whole thing back into the sauce pan and cook over medium heat, stirring constantly with a heatproof rubber spatula or wooden spoon, until its thick enough to coat the spatula or spoon this usually takes about a minute or two longer. Dont boil it or the egg will harden. Strain into the bowl set over ice water to stop the mixture from cooking further. Chill in the refrigerator until youre ready to use it. Oh, and I used leftover beets that I had cooked for supper and didn't eat all of, I didn't cook beets especially for this recipe! Annie

What if someone gets sick and dies - who's left holding what (yourself included)? Hmm, good question. I wonder if we could arrange to have it in writing, who the property goes to if someone gets hit by a truck. Because he is a landlord, can he change the lease agreement once the prior lease expires? Is is a yearly lease agreement that is able to be altered each year? I think we would probably look at a single long lease, at least 2 years, with our option to buy at the end of the lease protected. it appears that you made up your mind and you won't listen to what anyone else says no matter what No, that isn't true. Just because I don't agree with other people's conclusions doesn't mean I'm not thinking about the points they bring up. I don't understand why you're so certain that you would be unable to get a rental that you like better than your current one. Three months of research. Main thing is relationship between employer & employee. I my own self would not like to have a business contract interfere with that. Unless there's a friendship outside of work hours, isn't the relationship between employer & employee exactly a business contract? In the event of a disagreement, the boss almost always wins, & you could find yourselves with no home & no job either. People have said this several times but no one has offered a plausible scenario to *how* it would happen that couldn't happen now or in another rental. I mean, if you have one, I'm all ears, I just haven't seen one. I'm going to call several lenders Monday and see what they accept as a down payment from a rent-to-own situation, because I agree having a third-party lender would be a way safer option. And thanks for the reference to mrlandlord. I'll read there this weekend.

Annie, sorry to hear your good friend is retiring. I'm sure you'll still get together, though. I hope the new boss works out. If the person has any sense, he or she will just let you run the place.

Yes, CC, Chrystal and I live less than 10 miles apart and we socialize as well as work together. I've had the very good fortune of spending the last 15 years working side by side with a good friend who recognized my abilities and treated me as an equal, not as an employee. We were "in it together", doing something we both felt was important. No matter who replaced her, I'd be sad. she is the reason I met Elery, she's been involved in all facets of my life and my girls' lives.

She just got tired after 15 years of being on the job 24 hours a day, armed standoffs in the middle of the night, death threats, even holding a dead officer/friend in her arms once after he was shot. She is now teaching Criminal Justice at the local university.

It happens and I always knew it could happen, it's a political office and an elected position. I could get anyone as a boss. When a prosecutor retires mid-term, the Circuit Judge gets to appoint the replacement and so he did.

We'll see how things go, as I just turned 55 in May and am eligible for retirement. I could retire and get a part time job and still make what I'm making now, and Elery has insurance available, so it's not a financial issue.

But I'm sad, law enforcement is sad. I will continue as a friend, but the police in this county are losing a vocal advocate, an educator for their new officers and a good friend.

The new guy has no prosecutorial experience and so it's going to take some time for him to acclimate, he doesn't have the decades of law enforcment experience that Chrystal does.

Ah, but that's politics in a political office.

Annie, you are so fortunate to have had a boss that was also a friend. Most of the bosses I have had were certainly not friend material. Heck, they were barely "bosses".

I am sure you will get the new guy trained in just the way you want him! LOL

Good luck with the new boss...break him in well. I work for a board of five, and one of them is like your Chrystal. I can appreciate how much you appreciate her, hehe. Now if I could just get the others to stop driving me crazy. I'm looking forward to retirement, too....

Just curious - does this newly appointed boss have to run for his own job when election time comes around again? (thinking possibilities....)

Yes, Jessica, he will have to run for his own job in two years. Prosecutors are elected every 4 years here.

Unfortunately new bosses often tend to try to mark their turf a bit too quickly. Try to suppress the urge to leave sharp things on his chair. Or not. ;)

Great bosses are few and far between. I've had one in all of my long work life.

Yes, I know, Eileen, and I've had TWO. Chrystal was here for 15 years, Kevin was here for 12 years before that. So, I've had great bosses for the past two and a half decades, thankfully.

I did have to announce Chrystal's retirement at this morning's Department Head meeting. I cried. In front of everyone. Thankfully, only about 8 people attended.

Hey, you never know, this guy might be OK too, and I'd have THREE great bosses. Maybe...
