Oven-Roasted Tomatoes in Dacor Oven

HELP!

Have had Dacor Epicure double oven for just over two years. Yesterday, I tried to oven-roast my first harvest of Speckled Roman tomatoes. Amy Goldman recipe said 300 degrees for 2-3 hours, so I attempted one tray at 275 degrees on Convection Roast for 2 hours to start with. At 1 1/2 hours, loud fan sound came on with "U23 OVER TEMP." Tomatoes weren't fully roasted, but I immediately turned oven off.

Appliance repair shop said code is due to high humidity (why yes, tomatoes do have water). Repair person comes out Monday afternoon but I have many more tomatoes to contend with. It's a good thing I didn't put three trays in. I was told it's safe to use the oven, so I need to keep plugging away.

I just spoke with Dacor and they recommended Surround Convection Roast at 350 degrees for 25 minutes. That doesn't seem long enough for the tomatoes to caramelize. What settings and temps do you use? How many trays at a time do you do? With this code, I'm very leary, but I am in tomato nirvana now.
