Question or those of you who use a gas Infrared oven broiler
Comments (6)I have a CC but I'm sure they're all very similar. It takes about a minute for it to light and come up to broiling temps. Basically as long as it takes for the glow plug to get hot. I usually fire up mine as I'm preparing the food for the broiler so it's ready when I'm ready. I think one time I fired it up as an afterthought, and I waited a couple of minutes anyways to let it get good and hot. I didn't actively monitor it. I just turned away to do something else and came back to it. But it was ready so it was a non-issue for me. My range vents out the back, so smoke from broiling has not been issue. I'm sure the Wolf and Viking are similar in this regard. One thing an IR broiler does not do well is blackening. Comments (0)Is one better than the other not including infrared broiler? I've read a lot of good things about those but I'm unwilling to go into that price range. I had what I considered a great broiler in my previous Dacor wall ovens that I was very happy with. I don't think I ever broiled much of anything prior to getting those ovens. Now in my new place I'm concerned that the Electrolux gas range I've been considering may have a lousy broiler and wondering if a Bosch dual fuel would be better. Comments (8)Stainless will release meat when it is ready to turn. Do use a broiling pan. Your oven probably came with one - go find it and try it. Your foil just collects the fat right there under and around the meat, close to the broiler element do that it can pop, smoke and even flame up on you. Yes, your newer oven is likely to have options for either different broiling temps or settings that you likely didn't have in an older oven. Use the right tools and check out the options they give you. Now, I grew up here in Texas and we can grill most of the year -- so we grill burgers and steaks. If that's not an option for some reason, I pan sear or pan fry. I think you get a better sear and carmelization = better flavor. I started back when I was single and I didn't want meat fat smoking if I went to bake and I didn't want to have to clean my entire oven just to cook meat for one. I read a cooking magazine article about pan frying way back then - so the only meat cooked in my oven is roasted. You could try that. Use cast iron if you have it or stainless. Comments (1)If you want a good gas broiler, infrared broilers are much hotter than the conventional gas broiler. They can be smaller. Some of the prostyle ranges are wide enough to hold a commercial full sheet But you would have measure to see on height. Look at BlueStar.
