Comments (4)Flow rate (cfm) depends on the aperture area of the hood having enough air velocity to contain the rising effluent. It is not particularly dependent on whether gas or induction is used. Further, except for the need to remove gas combustion byproducts, the rising effluent from cooking on gas or cooking on induction will be the same for the a given cooked food. Pro style gas ranges, however, often provide grills that can generate greasy smoke at higher levels than pan fried fare on induction is likely to do, barring walking away and forgetting that the setting is too high. A given fan at the end of a short duct run will probably be equally loud as the same fan in the hood, but roof mounted fans can be larger than ones sized for the hood and can be run at lower speeds for the same cfm, reducing blade tip turbulence noise. Turbulence noise induced by a duct turn or two will probably be less than the hiss of the air through the hood filter baffles. kas...See MoreFinal decision on range
Comments (2)I think you would be happier with a separate griddle that you can take off and clean it much easier. Get a 30" stove and a Chef King 14x23" carbon steel griddle. Comments (3)Here in the Bay Area I feel like things can so easily get out of control...I totally sympathize with trying to get the budget back on track. Unfortunately we had some VERY bad news seismically speaking about the new requirements for the Peninsula. So, the budget got way out of wack during demo but before construction. Very quickly I had to make adjustments as we were doing exploratory digging and realizing that our foundation footings were not at all deep enough to pass the City's rules. Comments (12)I went with a Bosch because I am familiar with the brand and its reliability. I also liked the ease of taking off and putting back the filters since some of the other brands I researched were more cumbersome to remove and I am past the stage where I am clambering around my cabinets with a screw driver to remove a filter :-) I am not a vent expert as it's probably the appliance I did the least research on my own. One knowledgeable salesperson recommended the Best model. I did however consider the pros and cons of the various venting systems on a theoretical level and I am fine with my decision. My venting needs aren't as heavy as someone else since I am using over a 30" induction cooktop as I posted originally. However, there were larger and more powerful insert hoods so I don't understand why performance of an insert would be less if one got a larger more powerful hood. Also - and this is just anecdotal, I cooked A LOT and used a lot of spices including stuff like saffron and turmeric and never had particular issues with spices causing discoloration in the area surrounding my old stove. I also sautéed a lot although I didn't deep fry - and again, there weren't huge issues regarding surrounding areas - and this was with a completely ineffectual fan that was chiefly a noise maker rather than providing any kind of vent LOL so I can't imagine that my new vent will cause more issues than I had with essentially NO vent. I am still in the early stages of my remodel so I don't have pictures of how it will look installed in the cabinet. Function is very important to me so I try to strike a balance between function and form. At least to me, I liked the form of the cabinet insert for my particular kitchen and it didn't appear to have any less functionality than a stainless hood. The cost is probably higher because of the cabinet cost but it's not a huge expense in the scheme of things so that didn't factor into my decision since I could afford it without skimping in other areas....See Morepbx2_gw
