indoor grills

We are bulding a new house and I am about to purchase a viking rangetop with the grill. I do like to grill a lot and picture us using that feature a lot. Does this feature work well? Are they as easy to clean as the literature says, and does it make a huge mess everywhere else on the rangetop?

You must pre-heat the grill well and then let it continue to burn when finished so that it burns off any excess grease from the fats. Clean up is not that bad if you let the unit burn off.

You will also need a very powerful venting system. A 600 CFM will just not work.

No. A grooved griddle pan cannot grill. It basically fries like a frying pan, and give you what looks like grill marks. Only the parts which make direct meat-to-metal contact get charred. A charcoal cooks by convection, conduction and radiation by infrared. All parts of the meat facing the charcoal get heat and charred. In addition, it gets smoke flavor from fat dripping on the fire. In the winter time you can do a charcoal grilling in the fireplace with the vent open, or if you have a good enough kitchen exhaust system to do it in the kitchen. In the summer time you can use charcoal grill inside with the windows open. A chimney charcoal starter can get very hot for small scale grilling. dcarch

I would bite the bullet and rip it all out (and I don't say that often). I know it sounds overwhelming but you could do the demolition in a few days. It will make a huge mess but you can save a huge amount of money by doing that part yourself. If money is tight you could drywall the ends and do some sort of horizontal wood on the top. That would cut down on the cost. Thinking ahead you could do it in a way for future storage on each side. Or, go for it with the resurface. Or, design the area in a way to do storage on both ends. Or, maybe when you rip the ends off you will be able to salvage some of the brick and rebuild like this but instead of the fireplace extending the storage sections would extend. Whatever you decide I think that giant wall of brick fireplace and grill could be put to better use for those with children. The grill is impractical as there is not even an area to land cooked food or utensils.

I have a 60” dual fuel range, we got a great deal on a floor model, so I wasn’t looking for an indoor grill but it came with the grill and a griddle. I use the griddle all the time... the grill... not so much, and we grill a lot too. It just doesn’t get as hot as my Weber, plus, it’s just not large enough for our needs (we are a family of 7). I use it here and there in the winter, mostly for grilling things like vegetables or pineapple because it does just fine for that. The clean up is a real hassle (though clean up for my griddle couldn’t be easier) and I just hate that part of it, it does keep me from using it sometimes. I do have a great vent and system that takes care of the smoke and odors, but I wanted that anyways because we do a lot of high heat cooking even without the grill. If I could do it again, I’d rather have double the space for the griddle and not have the grill at all. I much prefer my outdoor grill, we use it almost year round even though we live in a cold climate as well... it just doesn’t heat well for me on the coldest and windiest days, so a more sheltered location for my outdoor grill would be higher on my priority list than an indoor grill if we ever have to move again. Grills basically never get clean. Keep the area surrounding it as clean as possible, of course, but the grill itself gets brushed and scraped -- never actually "cleaned".

guadalupe and paddy 99 speak true. It would be a mistake to disregard either of their comments.

i have a wolf 36" AG with grill.. i love it.. yeah it does take a little work in keeping it clean, and no doubt you need to spend some money on a ventilation system (my Thermador 900 cfm works just fine any more I feel is over kill) Also wolf has a nice stainless steel cover for the grill which hides the unpleasant view of the burnt grill...

I have a grill on my Monogram. The best way I have found to clean it is to let it burn off for 5 to 10 minutes or so. Then take your grill brush and dip into a bowl of water and scrub. The realeased steam softens the remaining food and grease and really gets it quite clean. Get a long handled wire brush as it gets quite hot in the steam. Then a quick wipe over the grates with a soapy cloth and it is pretty clean. The more you use it, the easier it gets!

I have the 600 cfm Ventahood (apparently equivalent to 900 cfms according to the company) and it works great with the grill and burners going. I Have a large capture area which helps too. Definitely get an increased depth vent. Mine is 22.5 but mounted out several inches making it 24 inches.
