No idea about the newly redesigned Wolf AG ranges, but one of our criteria after returning the poorly designed and poorly functioning Jade range, was one with a very quiet fan, and an on/off switch for said fan as well, was preferred. Our 2008 (?) Wolf AG has a pretty quiet fan, and we only switch it on for convection, or to facilitate cooling down on super hot days, or after lengthy/high temp oven use.

I really like Goo Gone for this type of cleanup - easily available from your local hardware store. Use a cotton ball if you are sensitive to citrus, and then rub with a rag or paper towel. It may take a few tries, but it should work and will not cause any damage to your glass. Just make sure you remove any oily residue once you are done, either with glass cleaner or dish detergent. I also wanted a 48" range for my kitchen, having never had one, I really looked for a Wolf or Viking at a discount...but found nothing I felt comfortable shelling out the money for. Even on Craigslist/ebay....found some, but still, IMO the deals were very risky due to no warranty or fall back if something went wrong. We did purchase a 48" kitchen aid range...granted I have never had a wolf or Viking.....but I absolutely LOVE my Kitchen aid range. We purchased it at Sears outlet/discount for about 60% less than retail (small scuff mark at bottom) and we did get an extended warranty. I love the way this range cooks!!! I love the convection oven and the fact that I have a smaller oven to cook in most days. I am not sure if you have ever had the higher end appliances, I have not and so this is a total upgrade for me and I have a peace of mind knowing I have a warranty. Also, we purchased the Sharp microwave, 24" I was able to get this for 70% below retail from Sears outlet also (not sure what was wrong with it, it was still in original packaging) ...we love it.!!!..total space saver and my DH who is 6'4" can even use it with ease. The controls tilt up so NO bending over to use it. I highly recommend getting the Sharp microwave, everyone who comes into our kitchen raves about it! Also, don't rule of 48" kitchen aid range, you can find some good deals.

I just got the wolf speed oven and so far so good. I just did a partial kitchen remodel and got the 36 inch all gas wolf so wanted a smaller electric oven for a 2nd oven or for smaller meals. I also was happy to ditch my countertop microwave. I had space in my cabinets to put the 24" oven in without a lot of carpentry needed. The24" seems to be the same interior size as the 30" model, only the outer casing is different. At first I was a bit thrown off by the fact that the microwave turntable turns even when using convection mode but I've found that with the low riser its great for cakes and pies. They rotate as they cook very evenly. I haven't tried any of the microbake or microroast settings yet and the "gourmet" modes seem sort of silly, mostly just plain microwave.
