Gaggenau steam oven with water tank vs Thermador steam oven

I found a Gaggenau steam oven with water tank display model for $4000 (full price around $6500), yet a new Thermador steam oven costs $3000.

A lady in Purcell Murray said it might not worth the extra if I am getting the water tank version and paying full price.

Should I get a Gaggenau floor display or a new Thermador steam oven? I like the look of Geggenau and it has good reviews, but getting a brand new oven is also nice. I will install it in an island.

Owners of these steam ovens, would you please share your experience? Thanks.

I'm pondering the same thing. If I understand correctly, along with not being plumbed, the Thermador in combi mode only has one level of steam (on), whereas the Gaggenau has several steam levels when in combi with convection. I'd pay something for that, and something for the convenience of a plumbed unit ( gotta pay the plumber too), but not having used either I don't know how important the multiple levels of steam are.

Multiple levels of steam are da bomb, the cat's meow, the bee's knees, the jelly to the bread.

100% steam for veg, dumplings, etc.
60% steam for combi- roast/poach chicken breasts, et al.
30% steam for all kinds of things you want moist but not wet (sorry to be vague. I use it all the time but can't think of specifics).
I use 80% steam the least, but I do use it, mostly if the chart says to.

Plumbed is also fantastic. I haven't used the tank kind, but I'd hope it would have similar results, just require more doing.

Plumbed is so much more convenient, if you can do it. No shlepping water to the unit, more space inside the unit (since it doesn't need a water container), it never runs out of water, it automatically drains the water (little or no wiping out), and can effectively purge the steam before opening the door. Also, the Gagg Combi is much more than just a steam oven. It can do convection roasting/baking, since you can set the amount of steam to 100%, 80%, 60%, 30%, or zero with any temperature you want (not just 210 degrees).

We love our Wolf CSO and probably use it daily. I have 4 ovens counting the micro but if it fits it's most likely going in the CSO. Ours is 4 yo and has had to be serviced once. The water heater needed replaced. I have no local service anymore but did when I 1st purchased it. I had one call in the 1st year but oddly a brand new circuit failed in our service panel which stumped the service tech, wasn't the ovens fault at all. Fortunately the oven isn't that heavy and fits easily into the back hatch of my car so I just took it out and took it to the service center 70 miles away. I live very rural so everything is far away. I had it back in a week and cost me $160 out of warranty to replace the heater. Back to working like a charm. It was a pain but worth it. On a side note, we were using our filtered well water for the 1st 3 1/2 years but have since switched to bottled water (not distilled) as our well water, though filtered still has a lot of minerals which will deposit out over time. The guy who replaced the heater mentioned that it needed the deposits cleaned out even though we descale fairly regularly. So we switched to see if that will help (most assuredly it will). The size of the Wolf was a major + for me, we also have a Wolf convection oven so it helps that the stack is all one mfg.

I went through the same question some years back. Miele has more features for the $$, so I originally wanted that, but at the time they didn't have a combi/convection steam oven that could take 208V (what I had), so I settled with the Wolf instead. And I must say, I've been really happy with it. It works, it's not fussy. Yes, it doesn't have the color swipey screen the Miele has, but I'm not convinced I miss that all that much. Would I like a broiler? I think so, as it is something I use, but I do have another big oven with the broiler (that unit almost always takes a backseat to the convection steam unit) and I can use that when I'm broiling something, so it's not too bad. I've kept tabs on the Miele, and I've discovered that considering that if you don't get a plumbed unit, the Wolf is more forgiving than the Miele on how much water is in the tank (I'm pretty lazy and never fill it up all the way, and the Wolf lets me still use it as long as I have enough water). If you really want to go into the details about adjusting settings, moisture level, turning on upper element broiler, you'll want the Miele, but if you just want to use it, I think you'd like the Wolf. I certainly don't regret having to "settle" for it at all.

@NT_guy thanks! The floor model is the 1.6 cuf, the salesman told me that the new one is 2.1 cuf (as big as the xxl Miele) but I wasn't sure if it was already out or coming out. I am torn because of the same reasons you mentioned - self clean, hinge, and covered broiler! I checked with a friend who had the gaggenau for a couple of years, they used the self clean only once and they use it on a daily basis. They assume their cleaner wipes it from inside every now and then coz it looks really clean. that tells me that steam cooking is probably constantly melting splatter and you would rarely need the actual self clean with the cartridge, or in the case of Miele, wiping it with their product. So my biggest factor is less of an issue i guess. The hinge is awesome, but since that floor model is a right hinge, i feel it would be a bit inconvenient.. Any difference you felt between the two in terms of functionality and outcomes? Thanks!! Congrats for your new oven :)

We are getting a Gaggenau steam oven because the Thermador chef at the builder show told us that if his house was on fire he would take his Gaggeneau steam oven with him. He was telling my husband that is it larger and he can start smoking his meats in his smoker for 4-5 hours and then finish in the steam oven. The Gaggenau is the largest one so my husband was sold. We are getting the Thermador convection oven (I know they don't match but Thermador doesn't give you credit for buying 2 ovens with them. I love that the Thermador convection oven also has a dehydrator with it too! We are doing Thermador induction stove top and then you get the dishwasher for free. I'm so excited for the induction stovetops (but we are plumbing for gas in case when we sell someone wants gas or when I get old and the pans are too heavy, I can switch to gas. I just hate having to take off the grills to clean underneath because I always have things spilling below the grill. It will be so nice to just wipe off and to be able to use the surface to serve on because it cools so quickly when you take away the pans.

If the Gaggenau unit is un-used, no brainer. Gaggenau is the Lexus to Thermador's Camry. They both share technology as they are cousins under BSHG. The Gaggenau will have the menu to learn and better feature set.

I'm having my dealer with Thermador send me a chef so I know how to operate the induction stove top and steam oven. Gaggenau and Thermador are owned by the same company. The Gaggenuau steam oven is bigger. I was disappointed when the PIRCH store closed in Dallas because they would send a chef to your home but our Dealer said the area rep would send a person - not necessarily a chef but someone to show you how it works. I think it is the least they can do when spending so much on high-end appliances. You need to know how to operate them and going to a showroom doesn't allow you to touch and experience so you learn - that is how I learn not by watching.
