Replacing wall hung sink DIY?

I posted this on the plumbing forum but there doesn't seem to be as much traffic over there as here and I'm a bit concerned that their audience is way more knowledgeable than I am and might give me way too much credit as to what I'm capable of...

Right in the middle of our master bath/study remodel we bought a condo (just what we needed--not!). It's new construction and has a wall mounted, handicapped accessible sink in one of the bathrooms. We don't like the look, and we need storage, so we'd like to take the sink out and replace it with a vanity in the exact spot. Any thoughts on how difficult this would be for total novices to do? Are we being foolish to even think about making this a DIY project?

And while I'm at it...we're thinking about tiling the backsplash ourselves in the tiny kitchen. Thoughts on this?
