Does anyone have the Miele Combi Steam Oven Installed yet?

Miele US released the Combi steam oven (DGC 408x XL) last month and I'm trying to start a thread for owners.

Do you have yours installed yet? Any early reviews, problems or comments?

It's hard to find any reviews for this product (even for the 508x XL euro version which has been out for quite some time). The few reviews i found are from Australia and they had some initial problems.

Did you happen to look at the Wolf steam oven? Much larger interior...just thought I would mention it...that is what we selected.

At my appliance store, they love all the steam ovens...the Thermidor, Wolf and Miele...seems to be the newest way to cook...

about 0.1 cubic feet larger, if I have the numbers correct. Maybe you are thinking of the Miele steam ovens (40% smaller), not the combi xl.

We had been waiting a long time for this oven to appear in Canada and we planned to install it in our new condo that is under construction. We had ordered it and obtained confirmation from Miele that it would operate at 208v. We have since found out that this oven has not been approved by the Canadian Standards Association (CSA) for use at 208v and consequently Miele are now not offering it for sale in Canada. Apparently it has been approved by the CSA to run at 240v but no one in Canada has this voltage available to them. Our condo builder told us it would cost about $2000 for extra wiring and a transformer and we would have to put up with a hum and a transformer mounted "in the open" for cooling requirements. He also told us he would not install a device if it was not CSA approved. If any Canadian reader has a different story on the power supply, we would like to know. We were very, very keen to get this oven and are frustrated that Miele would not have addressed this power supply issue.

Installing only Speed and Steam Combi Ovens - anyone else done this?

17 3/4 x 13" sheet pans fit in both my Miele Speed Oven & Wolf Combi Steam. The steam oven comes with 4 racks, two regular oven racks, one perforated tray & a solid metal tray. The Speed oven comes with a glass tray & one metal rack. When using the combination/bake mode (baking & microwaving at the same time), any metal cookware cannot touch the sides of the oven. so you couldn't use the 17x13 in that mode. 12 copcake pan fits, bundt pan fits. I don't have a Dutch Oven (a Le Creuset is on my wish list) but I believe it would fit. Just an FYI, we ended up with the Speed, Steam & a conventional oven because we do the big family holidays & needed 3 ovens. My plan was to get a convection microwave as the 3rd. We went to a Wolf cooking demonstration & fell in love with the steam oven (24"). We only had 24" & couldn't fit the Wolf Microwave/Convection oven so ended up with the Miele Speed oven. My husband works late & I get a 30 min notice when he's on his way home. We justified the cost of the Speed Oven based on his work schedule. I do like the Speed oven but I love the Steam oven. I use both almost exclusively as we are empty nesters. Another thing to keep in mind is that these are not self cleaning ovens.

I don't know the answer but I am curious. if I were you (and having the benefit of hindsight) I wouldn't hesitate to call any of the Miele USA "Experience Centers" and ask to talk to any of the design staff. If you are in the US start with the Princeton, NJ center, their US headquarters. Even better if you can get to a center. The staff at these centers are a world apart from anyone you'll encounter at any appliance dealer, they use the products for demos and classes and typically have the appliances in their own homes. And it's their job to know the details on what you are asking. And report back and let us know. I want the broil feature and only those two offer it... wolf does not. Since i will be putting the cso with a single convection under it and another single convection under a cooktop next it I don't think there is an option to mix appliance, While Miele's CSO has a broiler element, it's only about as powerful as what you'd expect for an "average" residential oven. I find it works to give dishes a little bit of heat from the top, but it isn't really very useful for char broiling. That's a problem with a lot of ovens. If you want to get a good broiler, you need to buy a higher-end gas oven (those often advertise what they call "IR" broilers), or you need to buy a Bluestar wall oven. That is one of the few electric ovens that is known for having a very good broiler element. Putting a wall oven under a cooktop doesn't generally work all that well. Not only do you have to negotiate the clearance requirements between the wall oven and the cooktop, there also is the problem that wall ovens typically sit closer to the floor. With in-wall installation, that's awesome. But when you are already in a bottom cabinet, that means the door is too close to the floor and it's very awkward to access. As for mixing and matching, I honestly wouldn't worry too much. Nobody is really going to notice after a few weeks. It's a little more noticeable when the units are directly next to each other. But even that doesn't matter much. We have a stack of Miele CSO and SpeedOven in the wall, and a Bluestar range right next to it. I don't think anybody has spotted the different brands yet. We also have a paneled SubZero fridge, but we installed a Miele handle, as it happened to be cheaper and a design that worked better for us.

We are looking at going with the new Miele XL combi-steam over a Thermador or Wolf equivalent. So I too am curious.

I've seen the new Miele live but I really didn't like how the control panel has to lift up to access the water reservoir. Also, I found the menu driven system a bit confusing but the oven had only been installed for one day and none of the salespeople knew hot to navigate it yet.

I saw an AEG steam/convection oven in Vancouver and it's much bigger than the Wolf (2.59 v 1.8 c.f.) and exactly half the price $2700 v 5400. I still need to see it live so I can compare the AEG and the Wolf but the price alone is very tempting.

miele just finished installing my combi steam oven

Did you consider the Wolf Combi Steam (about the same size). Why did you go with the Miele? I see you also have a Miele oven. How do you like it? I am researching Combi-Steam and Single Convection oven combo's and like the interior size of the Wolf and the Miele. Haven't seen problems with the two combi steams, although I think they have some operational differences. Have read about porcelain chipping problems with Wolf 30" convection and temperature problems with Miele 30" convection, so I'm in a real quandary.

We are comparing the two steam ovens and would also like to hear feedback about the Miele. Nobody near us has it available to look at in person.

Does anyone know what the Miele does that the Wolf doesn't and what the Wolf does that the Miele doesn't? THis is what I need to know to decide. Thank you.

Miele has a heating element on top for broil function where wolf doesn't. otherwise, they are about the same.

We installed a Miele combi- steam about a month and a half ago below our counter. I love it...but I must be challenged...I can't quite figure out all the menu programming stuff. My husband hasn't used it yet because he hasn't read up on how to do it. Has anyone found a good thread for using this oven?

I haven't done a lot of "menu" cooking either.. Usually I just create my own program. A few times that i tried menu cooking for vegetables, they turn out a bit overcook for my taste, so I readjust and select "al dente" on the scale each time and they come out better.

I tried the "croissant" setting and it came out perfect.

you can find some recipes on the miele website..

if you click on "recipe search", u can find the ones just for the combi steam oven.
