Installing only Speed and Steam Combi Ovens - anyone else done this?

Comments (12)I haven't done a lot of "menu" cooking either.. Usually I just create my own program. A few times that i tried menu cooking for vegetables, they turn out a bit overcook for my taste, so I readjust and select "al dente" on the scale each time and they come out better. I tried the "croissant" setting and it came out perfect. you can find some recipes on the miele website.. if you click on "recipe search", u can find the ones just for the combi steam oven. Comments (12)I want the broil feature and only those two offer it... wolf does not. Since i will be putting the cso with a single convection under it and another single convection under a cooktop next it I don't think there is an option to mix appliance, While Miele's CSO has a broiler element, it's only about as powerful as what you'd expect for an "average" residential oven. I find it works to give dishes a little bit of heat from the top, but it isn't really very useful for char broiling. That's a problem with a lot of ovens. If you want to get a good broiler, you need to buy a higher-end gas oven (those often advertise what they call "IR" broilers), or you need to buy a Bluestar wall oven. That is one of the few electric ovens that is known for having a very good broiler element. Putting a wall oven under a cooktop doesn't generally work all that well. Not only do you have to negotiate the clearance requirements between the wall oven and the cooktop, there also is the problem that wall ovens typically sit closer to the floor. With in-wall installation, that's awesome. But when you are already in a bottom cabinet, that means the door is too close to the floor and it's very awkward to access. As for mixing and matching, I honestly wouldn't worry too much. Nobody is really going to notice after a few weeks. It's a little more noticeable when the units are directly next to each other. But even that doesn't matter much. We have a stack of Miele CSO and SpeedOven in the wall, and a Bluestar range right next to it. I don't think anybody has spotted the different brands yet. Comments (6)If you type “Combi Steam Speed no other oven” in the search box in Discussions/Appliances you will get many threads on this topic. The down side I would see is not all of your larger pans such as half sheet/cookie/large roasters/pizza stones/etc may fit in either oven. In the case of miele the speed and combi steam ovens max out at 435 degrees and the broiler is not as strong as a full size oven. It could also be an issue down the road for resell as the cabinets would need significant rework to incorporate a traditional 30” oven. That may or may not be an issue for you. The cleaning aspect is another consideration as self clean may not be an option. (I use self clean on my miele Convection oven - 5+ years and no problems). I was fortunate to be able to include a 30” wall/combi steam/speed (all Miele) in my kitchen. If I had a choice I would have nixed the speed and found a place to house an inexpensive microwave hidden either in a cabinet or my walk in pantry (I still have my old toaster oven there and use it occasionally). Comments (3)In my previous house my Mieles CSO XXL was placed under the counter in the island. I didn't have room for it anywhere else and I was able to use the water supply and drain from the prep sink next to the CSO. I was happy to have the CSO, but didn't love the low installation height. In the house we built this year I went with the Miele CSO XXL again and this time installed it in the wall with a Miele coffee machine above it. The CSO height was determined by how high I could place the Miele coffee machine and have that also be comfortable to use. The top of my CSO ended up at 41". I'm not that tall, so that is a comfortable height for me to place things in the CSO. Got a plumbed unit again and was able to connect to the drain and water line of the laundry room sink on the other side of the kitchen wall. Plumbed is the way to go. I use the soak/rinse cycle after nearly every use, to keep the CSO clean, and having it plumbed means that all I have to do is press a few buttons and the CSO does all the work. No filling or emptying water containers. As far as steam, that should not influence where you place the CSO. No different that a regular oven. When you open a very hot oven, either in a low range or higher on the wall, you will get a blast of heat. With the CSO you will learn to open the door slowly, take a step back and not stick your face over the door! Not an issue and humans are capable of learning quickly! :-)...See Moredivotdiva2
