Kerdi Shower Floor Only? Vapor issue with back 2 back Showers?

Two questions:

I'm considering using a mud guy to do my showers (just does mud, no CB). He's never heard of kerdi and I'm paranoid. I was thinking of asking him to at least kerdi the floor of the shower and up the sides 10 inches. Is this ever done? Is this pointless? Would this create the opposite effect I'm looking for (residual wall moisture would come down the mud, into the floor mud, which is under the kerdi on the floor?)? If my idea is not completely crazy, is a membrane still used on the floor with kerdi? Or just one or the other (creating a vapor problem?)?

Thinking about the vapor problem has led me to my second question. The showers are back to back with a 9 inch wall between containing all plumbing for sinks, toilets, showers, and tub. If the mud guy puts up paper and mud on both sides for both of these showers, will I have a moisture problem between the two showers in that wall? Is there an ideal way to handle this?
