Help in selecting an induction cook top
Comments (17)As I explained in my first post, I do need large burners...Certainly more than 1 (4 or more), which is why I was considering alternatives to the 36" units that I've researched over several months. Again, johntex, sorry for taking up room on your thread. I was just hoping to see if avid induction people would go to these lengths to have it or if I was totally crazy. As for your original question, I can only offer what I found in my research and the thoughts I went through in considering my options. Everyone, regardles of brand, seems to love their induction. This is the first I'd heard the specifics of the Thermador recall or any problems from it. The Electrolux/Kenmores are definitely the leader in pricing with Viking being the most expensive. I was afraid of the Electrolux models being a pain to clean around because of the way they sit up from the countertop, but owners assured me it was not a problem. The glass surfaces would be pretty equal in cleaning, but the ones with speckles, rather than glossy black, should hide fingerprints and waterspots better. I know this from having ceramic cooktop before. I never considered a hybrid model, because I figured I'd love the induction and avoid using the radiant burners, and I wanted to use every inch of it with no reservation/hesitation. I didn't want to resent having to use the other burners when forced to...Also, I'd think that part would be a pain to maintain, since food spills would cook on, which they won't on the induction side. I came to the conclusion that the way to choose a cooktop was by price and by configuration...How many and what size hobs will you need? Do you want a huge one in the center, or more evenly sized ones with larger burners in different places? Electrolux has their largest burners right next to each other. That might be a problem for me if I wanted to have large pans on both at once...and I thought it might be hard to reach the small burner behind the larger pots. I noticed yesterday that Kupperbusch offers a bridge burner, which might be desirable. As was already mentioned, Monogram has induction coming out soon. By the end of the year Miele should have theirs in the US (already in Canada). I talked with a rep aabout them and they sound exceptional for the construction quality and how the hobs are independent for power use and easier repair. I've also read rumors about Wolf and Bosch coming out with induction. Bosch is related to Thermador and Gaggenau, so I'm surprised they're lagging behind. Comments (16)Re: stains It was not clear from your phrasing if the stains came as a result of cooking the pancakes or if the plancha had stains out of the box that just seem unremovable after cooking on them. As I noted above, the first time I used my plancha/griddle, I ran it too hot and got some pretty good burned butter stains. I was able to remove those stains by applying undiluted Dawn dish detergent and scrubbing with a dampened blue ScotchBrite ((non-stick suitable scrubbie) Took a bit of elbow grease but that cleaned off all the stains. There seems to be a Demeyere Non-Abrasive Cleaner and Stainless Steel Polish. User reviews seem very positive about it doing a good job with burned-on oily stains. A google search showed it to be available from the likes of Amazon, BB&B, etc. Also did some checking on using my old stand-by, Bar Keeper's Friend (BKF). The Demeyere instruction booklet does advise against using "abrasive cleansers" but that seems to be about harsh scrubbing with the likes of Comet and Ajax. A google search on BKF + Silvinox turned up recommendations for making a wet paste of BKF and water. Daub it over the stains rather than scrubbing. Let the wet paste sit for an hour or so letting the Oxalic acid do its thing. Then, wash it off or scrub with non-stick-suitable cloth, sponge, etc. OTOH, if the plancha came with the stains out of the box, it can be returned or swapped for a replacement. My shipment even came with a return label in the box in case I wanted to return it. Also, replacement of marred units was discussed in the Chowhound thread. Comments (23)I am also an induction convert from gas. I agree about the control/ease of clean up etc discussed above in other posts. The one element that I really like is that I can cook at low temps equally across all the hobs. My former mid range gas cooktop seemed to always be too hot on the larger burners even at the lowest settings. I am sure if I stepped up to a high end gas cooktop or rangetop I may have been able to solve that issue. I have had the wolf induction cooktop for 2 years and am very pleased with it. Even though it has 9 levels plus boost - the levels are NOT linearly spaced but logarithmic There was a post a couple of years ago that I cannot locate from someone at Wolf/Sub Zero that explained their logic behind the 9 levels. I have found the 9 more than adequate and have never thought - gee if I could just do a "half step". I mainly use levels 1-5 once I have my pan heated. I would certainly contact BlueStar and see how they have calibrated their levels. It does look like a nice layout and a good price point.
