Help -- How Well Do Speed Ovens Broil?

Advanium, Velos, Miele ...can you tell me if you have a speed oven, what has been your experience with the oven's broiling capabilities? I'm thinking about purchasing one, but if the broil function is not as good as my main oven's maybe it's not what I need. Speed is not so much the issue here, space is. Also, I notice many advertise they are pre-programmed with recipies. Can you combine the different cooking elements the way you want, or do you have to follow the programmed recipies? Do convection/microwaves function at all in this capacity? Speed ovens are quite expensive and I never trust what the salespeople tell me.

I personally don't own a speedcook but wanted to make a suggestion. Miele and the Sub Zero and even GE Monogram distributors in my are have showrooms with working models. Are you somewhere you can find a working model to test out? The Miele works really well in the limited tests that I performed using it. I used it as a microwave and a used it to bake some puff pastry based pies and it was wonderful. I know some people have complained that the Miele is hard to clean but I currently own a microwave with a stainless interior so I am used to cleaning them.

We have a Monogram Advantium 240 wall unit that is both a speed oven & microwave. It has upper & lower halogen bulbs rather than a conventional broiler element. It can brown as well as cook foods, but cannot conventionally toast nor is it a convection oven.

There are two sets of button controls, the left set for speed oven & the right set for microwave. Each has programmed recipes plus the choice to do your own thing. The oven comes with a turntable & several trays that go on the turntable. In speed cook mode, you can place a glass ovenproof dish directly on the turntable or use one of the supplied metal trays. For microwave mode, you must use the supplied white ceramic tray.

I did consider the Advantium initially. But was told by appliance salespeople that the Advantium still cooks with the halogen light even when used without the microwave. The KitchenAid speed oven also uses some kind of light I believe. So I don't consider that to be a "regular" oven. Now, beeing honest, there is no specific information that I am aware of that would make it to be "bad for you" to cook with the lights. But I don't feel completely comfortable with it just yet for some reason. annab6

I don't mean to hijack, but Sayde, I have been meaning to post a shout out to you. I think you and I may be the only two GW members with a Blue Star RNB and a Miele Chef Speed Oven (as opposed to a Master Chef). I really like the speed oven, but I don't use the combi functions very much because I have just no idea what to set the thing on. Can you give me a bunch of examples of things you use the combi functions for and most importantly, what time and temperature you use? Thanks so much in advance.

We rarely have a need for a microwave, but after doing without for three years I knew I wanted one. We opted for the Bosch speed oven, and use it much more than I thought I would. Use is about 30% speed cooking, 20% microwave, and 50% of the time we use it as a small convection oven. However, the oven that has fully won me over is the steam oven. It is wonderful, and after some glitches with the control board it is working flawlessly (Bosch has been top notch for repair and service). It does everything that a regular microwave does except pop corn. Food reheated in a steam oven doesn't even compare to food reheated in a microwave. I've used all three (speed, steam, full size convection) at the same time on quite a few occasions and love having them all. However, if I had to pick just one of the smaller ones to go with my full size it would be the steam. I'd put a tiny microwave in the pantry for that rare need. Good luck with your new ovens!

Agree with Dana above that my speed oven is only serving as a microwave at this time. However its in a very visible part of my kitchen above the single wall oven so it looks great. the wolf range top is a workhorse, and so simple. If it wasn’t for the red knobs, there would be no hint of arrogance about them. i have barely used my wall oven so im so glad i didnt get a double oven. I have the sub zero column paneled 36 inch fridge / 36 inch freezer and i stare at it daily and thank my lucky stars for them. it costs more than my car but in the grand scheme of things/ cost of the remodel this kitchen is the best part of the house and will be a factor in its sale price more than any extra fancy millwork or heavy duty sound proofing or fancy tiles or whatever we spent $$$ on… in sum, spend the money on your appliances, cut it elsewhere.

Thanks to both of you, but to clarify, I'd like to know whether these units can broil...like you do in your big oven where there is a dedicated heat element that broils and sears from above at a high temp. Not just roast via high heat. Would like to find unit that does it all with out comromise. Thanks folks.

Yes, good question, alot of these oven's advertise broil or grill ability, even the the conv/micros, but is this stretching the truth?

I can broil with my Sharp R930CS. It does have a heating element in the ceiling of the microwave. The Miele also has a dedicated upper heating element not a light bulb like the Advantium. I don't know how well these would work for steaks and the like if they are really thick. Have you considered a 24" oven rather than a 30" oven for space saving? Gaggenau, Miele and a few other manufacturers still make 24" ovens. I think the Miele 24" oven is actually cheaper than the speedcook from Miele.

Homepro, thanks again. I didn't know that the Sharp could really broil !!! Thought it had only one heating element around the fan (I think?) Hmmm. Not considering broiling a steak, just chicken, a chop of some kind, etc. Actually Miele is out of the $$ range. Any additional info on people's personal experience would be appreciated.
