Comments (4)We recently bought a house with an older Amana downdraft gas range. After cooking on electric coil then electric glass top for the last 11 years I was excited to have gas... until I cooked on it. For an old piece of junk range, the downdraft was remarkably strong. Therein was the problem: the downdraft sucks the flames inward so cooking was horribly uneven. I really wanted to go induction but there wasn't room to do an induction range plus pop up downdraft and the cost of relocating an oven to a wall and doing an induction cooktop and pop up vent was cost prohibitive, so instead we bought a new gas range and are installing (in the coming weeks!) an overhead island vent, since our range is on a peninsula. Sorry this got so long, but I have strong feelings about the darn gas downdraft after being stuck with it for the last 6 months. Funny PS - we got our new range Thursday, ahead of doing our countertops early next month. It can't be installed right away due to an issue with the location of the gas outlet thingy and also the existing counters are in the way by about 1/4 inch. I'm happy cooking with a two burner hot plate, a toaster oven and a 12 year old convection oven combo microwave. Comments (6)Power levels are hard to decipher because there is a lot of bad information out there, including manufacturer's web sites. In case of Diva, I found their hard copy most accurate (confirmed with the company). Assuming you have the right numbers, then simply look at the wattage. Most of these machines are around 90% efficient so that number can be compared reasonably between different units. I like to see 3,500 watts so that it is able to comfortably exceed the power of the best gas cooktops (equiv. to 30,000+ BTUs). So try to find at least one hob with this power rating. But also make note of where it is. Some put this in the back which for our use, is not optimal as we use front burners most. The second issue is the number of steps and how easy it is to jump to a setting. Having to select a hob and then change its setting is way, way too slow. So make sure each hob has its own dial. And if it has a lot of steps, see if it has a quick way to jump to one of the settings as holding the up/down button for a while is also slow in my book. We never cook with ever burner on full blast so power sharing is fine in our book and we could care less about the total power the thing puts out for all the hobs combined. I am not a fan of "power boost" as that is a temporary measure and from what I have read, cannot be applied continuously. Comments (5)As far as my research showed me, every induction cooktop has a slight hum to them. I personally tried three different ones (Monogram, Miele and Electrolux) and someone else here confirmed a fourth (Thermador). It does get louder the higher (hotter) you turn the hob. However, at the lower (non-boil or non-sear) settings it is really not audible given the sound of a vent hood on low. It also depends greatly on the sensitivity of your own ears. I tried the Miele one at a girlfriend's house and I could hear it but she never had in the 6 months she has had it:) We are getting the 36" Monogram induction cooktop... ordering in two weeks or so.
