Island hood ventilation

Recently I purchased a GE gas cooktop to be installed in an island. Three burners @ 9500 BTUs, and a fourth simmer burner @ 5000 BTUs totaling 33,500 BTUs. I had read somewhere that a good rule of thumb was 1 CFM for every 100 BTUs. Has anyone heard this before? Does it make sense to you? The formula implies that I would need ventilation hood capable of 335 CFM.

Additionally, I am still in a bit of sticker shock relative to the island hoods...Does anyone have any recommendations on the best deals to purchase? Thank you. Best regards.

There are others on this forum who know much more than I do, but I am just about to buy an island hood myself. For starters, I would guess you want more than 300 CFM. Some things I have learned so far from shopping and from earlier threads:

1. From the places I have been shopping, Island hoods cost about $1,000 more than regular wall hoods. One way to help figure out what CFM you need is to go to a very good appliance place and have them calculate it for you when they give you an estimate. I did this just yesterday at ABT appliance just outside of Chicago. The other appliance store I looked at in Madison, WI wasn't able to do that.

2. It isn't just the CFM - You want to get a hood that is at least 6" wider than your range - I'm guessing you have a 30" range and will want a 36" hood. It is possible if you got a 40" hood you could get by with fewer CFM. (but of course a 40" hood costs more)

3. Are you going with an internal blower or external blower - Internal blowers are less expensive and may require slightly less CFM, but they are noisy. External blowers are quieter, and the CFM they require can be impacted by how far /high your roof is from your kitchen ceiling and whether the duct from the hood will go straight up and out, or with have any twists or turns. You will want additional CFMs for greater distances and twists or turns. The blower may need to be purchased separately. Make sure the price you get includes the blower!

4. What is your cooking style - Do you generate a lot of smoke from things like deep frying, high heat sauteeing/stir frying or grilling in a grill pan? Also, is your kitchen open to your living room or dining room so that smells and smoke carry over easily to other rooms. If you don't generate a lot of smoke and your kitchen isn't open to other rooms, you can get by with less CFM.

If you don't generate a lot of smoke, and your kitchen isn't open to other rooms, others in this forum might be able to advise you on whether you could get by with a "down draft" system which would be way less expensive, but according to threads I have read isn't nearly as efficient.

Also - Don't forget to consider if your hood provides a good overhead light, how easy it it to clean and if the filters can be put in the dishwasher.

I'm actually a chef and have just purchased the GE Cafe AG range (couldn't afford the Bluestar). I have much higher BTUs and do a lot of high heat cooking. My kitchen will be open to my living room and dining room so I am going with a Best by Broan IEX170SS 40" hood with a 1200 CFM external blower, but the price is staggering. After shopping around the best price I have gotten is $3,300.

For an island hood you'll probably want extra CFMs. You should get at least 600 CFMs.

"The wall ovens were always preferable but optional, as was a 36" wide fridge as opposed to, say, a 31" wide that is taller." Regarding the refrigerator...stick with 36" wide by 70" to 72" tall. Manufacturers in/for the US are standardizing on 36"W x 70" to 72" tall refrigerators as their minimum size offering. Yes, you may find narrower ones here and there, but they're usually low-end of the mainstream refrigerators or very high end manufacturers (e.g., Liebherr). So, plan for this size space for your refrigerator: 38.5" wide x 72" tall. Width: 36" wide + 1.5" for end panels (3/4" on each side) + 1" for air clearance and wiggle room = 38.5" Height: 72" tall This way, you won't have to either search far and wide for a smaller refrigerator or pay $$$$ for a high-end refrigerator. Periodically over the years we've had people come to either here on the Kitchens forum or the Appliances forum frantically looking for a refrigerator to fit a small space (width and/or height). If it's a built-in, you don't have to accommodate the end panels b/c a built-in does not need end panels to hide the sides of the refrigerator. Counter-depth and standard-depth do need the end panels. And don't forget a 24" deep cabinet over the refrigerator (I can't tell for certain from the drawing if it's 24" deep, so I thought I'd mention it!)

I would suggest before going ahead you post your plans in the kitchen forum and see if there might be a better solution than the cooktop like that. The folks there are better than most kitchen designers in finding solutions that work best. You need a larger hood over an island space or open space because you don't have the walls and cabinets to help with capture area.

Kitchen work is only 10% cooking. 70% is prepping to cook. 20% is cleanup. Pair that with all of the code clearances and the 32 Rules, and it’s difficult, but not impossible, to do island cooking well. It’s the most expensive choice, and takes up the most room in a kitchen. You need a minimum 96”x 42” island for a 30”. With 48” aisles all around. Bigger needs a bigger island. With that big expensive overhead hood that far less effective than a wall hood. You pay more, for less functionality. But for a “dream” 250K Houzz inspired kitchen, that you’re building the house around, it’s possible. Danny Z, The Hestan refrigeration products are all made by an Italian company called Fhiaba. Consumer Reports last year raked them over the coals last year. I was thinking for built-ins (actual cabinet depths with the special hinges and custom fronts) of going with Miele, Fisher Paykel (most affordable), Liebherr, or Thermador. After much thought and research, I always come back to the very expensive tried and true... Sub-Zero. Not their newer more modern models but their classic versions. https://www.subzero-wolf.com/sub-zero/full-size-refrigeration/builtin-refrigerators They are the most serviceable and really stand by their products. Parts are always available and service is readily available. I had a glass front Traulsen in the past and it was a nightmare. I also looked into the newly designed True Residential line and bounced back to the Sub-Zero. OpaOne. Thank you. Yes, I agree. I'm about to press the order on a Blue Star 48" RNB with the 24" griddle as you have done. The burners are what have me hooked, that and that they are the easiest to repair and basically just like how my large outdoor kitchen grill/burners are set up. I once had a Garland with a salamander set up that was a similar type of burner as the BS, in a house in Connecticut, problem was that that had to have the kitchen built around it! LOL. I haven't ordered yet as I've been waiting to see what all of the hype is about with their new and much delayed Dual-Fuel Range/Rangetop series is all about. Of course, that places BS with the dilemma of mixing electronics with old-fashioned high heat. Not a good mix and much the reason why Wolf succumbed to lowering their BTU output and sealed burners. With island hoods, the more the better. The hood really needs to stick out 3" on all sides of the cooktop, plus you need more CFM than if you had a wall hood. That 'rule-of-thumb' is really for wall hoods. You should figure on doubling it with an island setup.

As to why island hoods cost more, they are larger, have to be finished on all sides, have to provide lots of light, and generally only go in high-end kitchens, which allows them to jack the price up more.

Guadalupe (or anyone else who knows about KOBE hoods),

Do you have a KOBE island hood? Are you happy with it? Does it clean easily? How would it compare to a Best by Broan hood. I'm dying to know - I am just about to purchase my hood!
