That depends on your definition of stir-fry. Asian mamas use less than the highest flame on their old stoves (don't know specifically, but general knowledge is that those were 9600 BTUs standard). I was taught how important it was not to get the wok too hot lest one scorch the oil. I've never been an Asian restaurant chef nor been instructed by one, but a lot of people here, who I assume have that kind of standard, claim the only true stir fry is done over a 100K BTU brazier. My opinion is that when you're cooking on the street that might be true, but in a clean kitchen, where one can chill and dry the food, the likelihood of steaming rather than frying isn't so great. The larger burner is Wolf's "medium". That's listed at 12K BTU. If you get your wok good and hot all the way up the sides before you start, cook small amounts at a time, dry all the surfaces first, etc., I'd think it would work, but I've never tried it. That's the rear burner and not really convenient for tending. I use the induction for almost everything. :) The gas is for where flames and/or hot air are required. I think you'd do better with a wok module (I think the Wolf is 18K BTU) if you want to stir fry regularly. I have a little grating with wood handles that goes over the gas fire for roasting vegetables. It was sold as "El Asador". :) You could make your own, really. There are also those "pans" made out of mesh or ventilated metal that they make for use on grills. That would solve your grating problem and open up your selection.

We installed two 30" Viking Ranges side by side in 2006 60" was not made in 2006. Paid $3,600 each.After 4 years and untold service calls my wife refused to cook on them. Burners worked fine, Oven was uncontrollable setting the temperature was horrible, It was always plus or minus 25 degrees. On my final call to Viking they suggested we go to Walmart and Buy two Thermometers that we could hang off an oven shelf. We could then play with the controls until we got the right temperature. That was the final straw. I sold both ranges for $100 each. Bought 2 new 30" Kitchen Aids with electronic controls. Ranges were attractive and well built. Cost in 2010 was around $11,000. Happy wife, happy home!

Ours had a stainless steel cover and edges, but part of the base was not stainless and it rusted. My husband replaced that part this past year. All the stainless still looks fine, along with the painted parts. The grill only really has 2 temps, hot and hotter, even though the dial shows a low. It takes some getting used to, and there are somethings we don't like to cook on it because it is so hot. We have used the french fryer a few times and the griddle when our power was out. It was pretty outrageously expensive when we bought it, but it is still going strong going on 16 years later. Cleaning is a breeze, because everything just burns off and then we wire brush the grates/racks. Other than the igniter, and the non stainless base, we have not had any problems with it. I asked my husband if he would buy it again, and he said he would probably shop around before buying another one.
