A Couple of Questions Relating to Weather

We had a thundersotorm last night with wind gusts up to 60 mph. Most of my plants are staked or caged, but I have a couple of Brandywines that are knee high and a couple of Dutchmans that are waist high. These plants were not staked or caged. After the storm, I noticed that all of these plants we laying on the ground, but still rooted in the ground. The main stem was sorta bent but not broken at all. If I try and stand the plants up, they just fall back over. Can I simply stake these plants and expect them to be OK?

Also, one of my Dutchmen plants is beginning to exhibit very faded looking leaves. They look nearly gray. Can anyone tell me what this is a symptom of? I did a search and couldn't find anything specific.
