?'s about worm composting

I've had a worm factory for just over year now. I had a major die off of worms probably 4 months into it. They all were trying to escape because the spout was clogged and I had water built up. Anyway, I'm on the second trey now and have been for probably 5 or 6 months. My question is, the bottom bin has got to be ready, what do I need to do to use the use the castings? Does it need to cure or anything?

Then how can I store it or does it need to be used right away?

How much and how often should I put the castings around my vegetable plants? I know it won't hurt to put too much but this stuff takes too long to produce to waste it. I would think it vary from the begging of the season to say mid summer when the plants are much larger.

Finally, this took a long time to produce. I usually put about a quarter of bag of lettuce or spinach every day and add shredded paper when needed. Started with 1lb of worms. But is this about the norm for producing castings? I had thought going in that I might be able to harvest 3 or 4 times a year.
