I've made a lot of sauces lately, most/all of which are pretty tasty in my completely unbiased opinion. I've put all my recipes on an excel spreadsheet, so if you wanna scale them up or down, it does all the math for you. if anyone wants the excel file, let me know and I'll email it to you.

from left to right:
asian style thai (really good, unorthodox hot sauce ingredients)
curry habanero (amazing and complex flavor, but with ingredients most are unlikely to have on hand)
M.Y.F.O. ghost (it will melt your face off)
roasted ghost (second favorite, extremely versatile)
habanero citrus (a slight modification of a recipe I got from here)
burning brain (my favorite)
sweet & sour habanero mango (this shoulda been in a jar, not a bottle, it's pretty thick and extremely hard to pour)
fiery thai (even though the other one is hotter)
the other roasted ghost sauces, off to the side for some reason.
fifty tabasco sauce (the lamest name ever, it had 50 tabasco peppers in the batch)

Excel file... Yes please! I just received my order of 48 hot sauce bottles, reducers, caps, and shrink wrap bands! I just made a pretty good batch of sauce from my yellow ghost peppers, if I don't see a similar rescue on your spreadsheet I'll send it your way. Thanks in advance!

Hi Guys...Once again, thank you all for the kind comments. Slate...As many of you have no doubt observed by now, formulations are form, function and condition dependent and as such vary accordingly. Detailing the processes, formulations and curing proceedures would require writing a book to be meaningful, since they have to be matched to all of the above. (And, yes...I'm still working on that) That said, the base for this piece is a very basic 1-2-3 mix of gray Portland, sharp sand & coarse gravel (for strength) with a handful of short poly fibers tossed in. The "scratch coat" on this one contained one part gray Portland to two parts sand (half sharp & half very fine blasting sand) with some added hydrated lime and flyash for workability in the "dry" mix. The "wet" mix portion of the scratch coat was modified with a high-range water reducer (superplasticizer), retarder and some bonding admix. The above, minus the sharp sand (extra fine only) is excellent as a final finish mixture for executing what I call a typical "French Antique Finish". It is very scupltable and can be detailed quite nicely to both rough bark and smooth textures. As for the "neat" mixtures, all I have time for right now is to say that it gets very tricky. There is no sand at all and the formulations and curing are supercritical...especially when the temp is above 70 degrees or there is any breeze whatsoever. This is where a couple of chapters on several different topics become necessary. But don't wait on my book. Do some experimenting on your own. Just keep detailed notes (including environmental conditions). Hopefully I'll be able to get enough of the processes recorded to help perpetuate the art form and leave it to dedicated creative folks like you to advance it. BB...Thank you also. The "big" project is still alive but I am now one of three bidders (including the amazing Carlos Cortes). Should know the status sometime between now and the fall. I'll need to look at my photos to remember all, but... I had been researching Wichurana Ramblers like Francois Juranville, Alida Lovett and Alberic Barbier... and I really liked photos of their blooms online, but seeing them in person, they just didn't do it for me. They looked healthy and happy (even in partial shade), but I just preferred so much more the look of Lavender Lassie and Penelope Hybrid Musks. I think in this case it's just entirely a personal preference thing. Also Francois Juranville didn't have a scent I could detect... while Lavender Lassie and Penelope, I loved the soft old-fashioned rose scent of. (and they are rebloomers... so double points for them.) I know lots of people love Crepuscule,... but the one I saw at Descanso, I wasn't a huge fan of, so I'm going to pass on it for a while. Just the color and shape I didn't like a whole lot. It was nice enough, you know... but with so many other choices, I preferred others. Their Cl. Maman Cochet looked very unhappy and crisped... but I've already bought one (its on it's way to me) so I'm going to give her a chance. I love how she looks in other people's photos and lots of people love her, so I'll try her. I had been considering some of the old noisettes,... especially since they originated in my home town... but I think I love MAC and Sombreuill (which I already have) and the two climbing Hybrid Musks I saw today so much more (and they're kinda similar) that I'm going to scratch the other noisettes off my list. I'm almost tempted to give up on the Reine Des Violettes (which I planted in late January) and replace with Baronne Prevost. RdV is pretty but it's SO purple from what I've seen in person... almost a blackish purple. I prefer more pinky-purples I guess? and it seems to take heat less well than Baronne Prevost...? The plants at Descanso were mostly healthy and blooming very well, but there were a few crispy petals around the edges. I know we've had some extreme hot winds lately that have damaged a lot of folks' roses around this area... so it's possible that BP was just more sheltered from the wind that RdV (RdV was definitely more out in the open....) Also, I worry about RdV wanting acid... and my soil is so alk. I think I just loved BP more for color reasons but I'll probably let RdV be and see how she does, and just also get a BP. I also saw climbing Aloha and bush Belinda's Dream... and while they looked healthy and happy, I just didn't care for them all that much compared to some others. Actually, right near Aloha was "Amy Johnson",.. which was a similar pink climber, but I liked it better for whatever esthetic reasons.

Well I was craving something hot & kind of gooey; had intended to have pea soup but just made Mac &Cheese with some of my tiny cherry tomatoes, spinach, baby kale & spring mix, and a sprinkle of bacon bits. I confess I used a box mix (really no faster than getting the cheese out of the freezer) ; I didn't add any of the butter it calls for though, instead I use fat free sour cream, a Tbs. of parmesan, enough water to make a smooth sauce after the powder is in, and a few grinds of black pepper.

My husband and I will be there at the tailgate at the Northeast Ohio Daylily tent selling daylilies--we are members of both the hosta and daylily groups--we will have on blue short sleeve shirts--the hosta group will be wearing green. The hosta group asked our group to sell daylilies---most of the daylily group lives far east so we are in charge of this sale. Note: Lake Road is closed just east of Cahoon Road. If you taking I-90 do not get off at the Columbia Road exit and go north to Lake Road you cannot get through. Instead get off at Crocker Bassett and head north to Lake Road, turn right on Lake and head east to Cahoon Park which is on the south side of Lake Road. If you are coming up I-71, get off at I-480 head west until you get to the Stearns Road exit, turn right on Stearns and head north. Stearns becomes Crocker-Bassett just north of Center Ridge Road. Continue north to Lake Road, turn right and turn right at Cahoon. Hope this helps. See you next Friday!

honestly, I don't want them all to be permanently posted. if I end up deciding to sell them, I don't want my recipes out in the public domain forever. but you folks have helped me a lot, so I am quite willing to share it with members here. that's why I am willing to email it out, but don't wanna post it. I gotta finish inputting 2 of them into the spreadsheet, but I will get those sent out by tomorrow night (maybe even tonight).

yeah, those are the ones that came out of the fridge, that I've been making use of. no, I don't think I have enough, but there's another flush starting, and this is florida, there is no frost. we got our first "cold front" this week, with lows in the 60s and highs in the 80s. I will ideally have more bhuts before christmas.

knowledge implies experience. I don't have a lot of that.

what I have, is the willingness to experiment, and the attention to detail to record the exact amounts of the stuff I add. and luck too, lots of luck. I'll send it to you shortly.

Can't reply to your email - you need to change your member settings so others can "see" your email address.

The google spreadsheet app lets you choose your sharing options. Public is only one option. The others are private and to show anyone who has a link. Essentially, you would send the link instead of the sheet. The benefit is that us with the link would be able to see changes you make to the sheet, or maybe contribute if you enable that. Neat app.
