Water uptake and therefore nutrient uptake is energy driven, i.e. it takes energy to absorb water and nutrients, and the roots need oxygen to turn the carbs the plant makes (its food) into energy - just like you do. When your plants wilt while the soil is still damp and the problem persists more than a day or 2, you can be almost 100% certain it's a root problem - probably related to excess water retention and the dearth of oxygen that comes along with it. Roots are opportunists - they don't/can't "go looking" for water, air, and nutrients, they simply grow where conditions are favorable ...... and don't grow where they aren't. In your case, the roots are probably growing deeper into the pot when the water supply is at its lowest, then dying back again when you water. The cycle of death and regeneration of roots not only impairs root function, it's very expensive in terms of energy outlay as well. What it takes to regenerate roots killed by a lack of air might have been spent on things more productive - like an increase in plant mass, blooms, fruit ...... Your soil choice has a very significant impact on how easy/difficult success is going to be, and on how wide the margin for grower error is. My take on what constitutes a good soil, at a minimum, is one you can water to beyond the point of saturation, i.e. until at least 15-20% of the total volume of water applied exits the drain, carrying accumulating salts with it, this, without the grower having to worry about root rot or impaired root function. In most cases, the inability to water correctly also prevents you from being able to institute a nutritional supplementation plan that works well because nutrient ratios quickly become skewed if you can't hit the 'reset button' by flushing the soil regularly. Dennis is right about tight little root balls, too. If I get sets that have congested roots, I rip the bottom half of the roots off the plant and use as nylon pick to tease the remaining roots apart before the set gets planted. I also remove the lower leaves of the sets and plant very deep if in a pot, and deep and at about a 30* angle if they get planted in the ground. Often, roots allowed to remain in a tight little wad end up staying in a tight little wad with the plant suffering for it, and that's something you want to avoid. Roughing up the roots actually sends chemical messengers to the rest of the plant, telling it it needs to direct energy to the root mass. Plus, the closer roots are trimmed to the stem, the more juvenile and vigorous they are (look up 'ontogenetic age'), so make sure the roots are going to be able to easily colonize your soil mass by correcting congestion before planting and using an appropriate soil. I used to get the magazine "Cottage Living" and loved to see what people did with smaller spaces. I loved the look of the charming and carefully done houses. Our house is not small as in cottage-like, but it is also not a mansion. I think seeing what can be done in a smaller space helps when designing for not so small. Your house is not small, but the look is more of a charming one that an exotic style. If you embrace how nice it is and what it can be, you will have a lovely place to live. When I was younger, I always wanted to be glamorous, but could never pull it off. I looked like the girl next door and wished I could be more grown up looking. Now, many enough years later, I am grateful that I look young(-ish) for my age and had never been at a loss for suitors before getting married, so I wish I could tell the young version of me to be grateful because if one is wishing for something else, they miss what they do have. I still can't wear red lipstick, but am ok with that now that I am wiser, lol. I subscribed to Cottage Living for the decor and appreciated the smaller scale once I started to read it. I also love the aesthetic of what were mostly charming homes and the variety of what could be done while also keeping their appeal. The nicer ones were not mini versions of big houses, but were their own proud more modest size. It was my one foray into house porn, so I can't recommend many others, lol. It is out of print now, but you may be able to see back issues at the library or if someone is getting rid of them such as on freecycle or CL. I finally parted with mine last year or I'd send them along happily. I tried their old website that was up past the magazine going under, but it directed me to another site, which looked cute too. Apartment Therapy may give you some ideas. You will have a larger amount of space to work with, but the feel may not be far off from what would work for you. My kitchen is fairly large now and yet it was done in a modest way for the decor. Its look fits with the overall scale of the house. If we had done fancy, there would have been a disconnect with the rest of the house no matter how much we updated it all. If you have seen a woman who is wafer thin where all the bones in her neck and ribs are protruding, and she is sporting double Es or more, you know what I mean. More is not always better.

Most Echeverias, Jades (at least mine), and Aloes can take pretty intense light. The bad news is, there is no chart that I know of. You will have to experiment yourself to figure out what works for YOU anyways. Pay attention to coloring. If you think a plant is getting too stressed, just move it to a slightly shadier spot.

UPDATE: The foreman came back with his lead plumber and another worker today. They removed the shower trim to check the valves from inside the shower and didn't see anything so they cut into the wall behind the shower to look at the pipes and valves. They found a leak from a loose connection between the pipes. (It was the pipe that goes to the handheld shower.) The plumber soldered the pipe. They are hoping that this is the fix to the leak. The team did not open the ceiling to look at the pan, drain, and plumbing since they found the leak in the other location. The foreman agreed to replace the ceiling though. I'm hopeful, but a couple of things seem odd. The leak happened after almost 6 months of use and the leak is not constant. It's only happened a few times even though we use the shower every day. Once we became aware of it, we noticed that it happens after the shower is turned off. Also, as I mentioned above, I noticed a wet area above the seam in the tiled shower entrance. Today, I noticed another wet area near the previous one and it I noticed it a couple of hours after the shower had been turned off (and after work had been done on the shower).
