Dwarf Fruit Trees, Grapes and Berries

Greetings!

I have just moved to Shawnee, Oklahoma from NW Oregon, and I am so glad to be here. I've been reading this forum for several months while still in OR, and now that I am here, I have some questions.

We just purchased a wonderful old home on a large lot in town and we want to grow some dwarf fruit trees, definitely apple and peach, but we're open to anything that grows/produces well in OK...maybe pear or plum? Does anyone have any recommendations for dwarf/small fruit trees that do well here (and don't need sprayed as we try to stay organic)? Also, what time of the year should they be planted?

Along those lines, does anyone have recommendations for good varieties of table grapes? What about berries (especially cultivars of blackberries...)? And, what is the best time of year to plant these?
