how to remove bermuda from a slope!

Hi gang! I have bermuda grass - much of it on a slope that is dangerous to mow. We have a large shade tree at the top of the slope (which is south-facing, so the tree doesn't shade it....) I want to remove the bermuda and replace it with ground cover. I don't want to strip the whole slope at one time, since there would be terrible erosion. I am worried about round up, since the tree might soak it up and suffer. I have tried digging out the grass in small areas and planting ornamental raspberry, but the bermuda magically keeps sneaking back in. Have any of you dealt with a similar situation? Thanks!!!!
