Freeze dryer for home use - Harvest Right

I saw this advertised on TV and have been doing some research on them. They are on the expensive side however much less than commercial models. I understand the Mylar bags with oxygen absorbers for long time storage and would plan on using them for some items, but I can't find information for shorter term storage ( 1 to 2 years) . I see no reason for the expense of the Mylar bags for food to be used in the nearer future. If I decide on getting one I would be doing a variety of foods. I am not sure how storing things in a mason jar with a lid and a oxygen absorber would work or vacuum sealing. Does anyone have experience or a link ?
