Freeze dryer for home use - Harvest Right

I saw this advertised on TV and have been doing some research on them. They are on the expensive side however much less than commercial models. I understand the Mylar bags with oxygen absorbers for long time storage and would plan on using them for some items, but I can't find information for shorter term storage ( 1 to 2 years) . I see no reason for the expense of the Mylar bags for food to be used in the nearer future. If I decide on getting one I would be doing a variety of foods. I am not sure how storing things in a mason jar with a lid and a oxygen absorber would work or vacuum sealing. Does anyone have experience or a link ?

Read quite a bit about them on some of the more "survivalist" oriented forums on the web - fairly mixed reviews as I recall with the main complaint being the lack of instruction manuals.

We had a brief discussion here about it last year sometime but I can't find the discussion right now. One outside info link/review I bookmarked was http://survivalblog.com/harvest-right-freeze-dryer-part-1-by-hjl/ It's a 3 part article on the pro and cons.

That said, for those who don't want to do home canning/dehydrating then both short and long term storage of dry foods in vacuum sealed mason jars or 5 gallon pails using mylar bags and O2 absorbers is a very common practice and there are many how-to discussions available on sites like homesteadingtoday.com and other similar forums.

I have one of these units and so far love it! One of things that does get missed is there is a large vacuum pump that has to sit next to, or under, the unit. This device is noisy and the two combined do generate heat.

Agree with PN, but if you choose to preserve them, pick, shell and freeze is the best method. They are the rare veggie that does not need blanching, and they are as good as fresh in midwinter. The same goes for beans, fresh or semi-fresh, in fact I dare say peas and beans are the best veggie for freezing.

You can leave the cobs on, but they do take 300%-500% more freezer space. Also corn loses a LOT of its flavor back into the cobs even if blanched and frozen whole. Cobs don't taste good, nore does any corn thats been lying around a few days.. If not shucked, cooked, and eaten within 20 hours you loose almost 50% of the true fresh flavor. My brothers mother inlaw was a farmers wife they had 60 acres and a farm stand in Salem NH (Hawkins Farm) We would go up in winter and be served frozen corn OFF the cob. It was as if it was from the garden a few minutes before, but that garden was all snow fields by then. The frozen ears are usually an SA, SH or SH2 type. These, I find have WAY more sweet, but lack that characteristic corn taste. They are hybrids and are genetically engineered for the higher shrunken gene that is adjusted for the higher sugar content. Its like eating bland corn with a big dump of sugar on it, yuk! If these hybrids are grwn nearby each other, they will produce toally unusable corn suitable for feed only. Happened to me already way back when.. I now stick to a good high quality no hybrid sweet yellow ears, no white, or milk and sugar, butter and cream ,or what ever the bicolor stuff is called. I love Lima beans! I buy them dried and frozen, although I've never had leftovers to freeze. Since they sell frozen beans that are great, I would think the soup would freeze also. I freeze all types of cooked beans, including hummus and my Texas bean dip. Today and yesterday I made burritos with my bean dip, turkey breast, and Mexican Manchego cheese on whole wheat tortillas. It's possible that the Mexican Manchego cheese disagrees with me, but I made them mostly for DB's lunch. I've been trying to find Chihuahua cheese here, but Mexican Manchego is the closest I can find - and it appears to be very similar to Jack - although less upsetting to my stomach than Jack. It's nothing like the Spanish Manchego I get that is hard and made from sheep's milk. Lars

Flash freezing harvest with dry ice

If you have a big chain grocery store in your area, check with them. Publix is one here that has dry ice. In San Diego, I found it at Baskin Robins too. I have found those dry ice directories to be worthless to me in this area. (I routinely have had to buy dry ice for my business). The most I've ever paid for it in the past 10 years is $2.00 lb. Dry ice at Publix is like maybe $1.25 to 1.50 a pound. If you put the ice inside a styrofoam container or box lined with newspaper without breaking it up a bunch you can put a square of it on the bottom of your container and then put in your fruit etc. then put a piece on top of it (the container is something to keep the gases sealed in to make it last longer) a few pounds would work I would think to freeze smaller stuff. Because you could do the quick freeze, then take it out and put in your freezer, then add more stuff to the dry ice. If you break it up into smaller pieces, you will have a harder time fishing the produce out of it when it's done freezing. Plus it's easier for it to burn your hands if you have to handle smaller pieces vs a larger one that you can wrap in newspaper, grab it up, set it down, fish out your produce, etc. When I've shipped lab samples on dry ice, 5 lbs will last up to 2 days during transit as long as it's sealed tight.

I can't recommend this product. The videos and websites and blogs (which appear to work on commission or something) do not mention the realities of operating this machine - it is heavy, over 100 pounds, and requires it own dedicated 20amp circuit. Demos show this machine being used in a kitchen, but this machine is so loud, that being in the kitchen at the same time it is running is impossible. It is hot and takes a long time. Cycles last 12-24 hours. We had to put it into the garage, but who has heating and cooling in their garage to maintain the recommended operating temps for the machine. The vacuum pump (not shown in the fancy videos) is highly sensitive and frequently drips or sprays its hot oil. Not only that the oil has to be drained from the pump and filtered after each use. Messy and annoying! None of this is mentioned in the videos and on their fancy website.

Although we were assured by customer reps that the machine is "easy" to use, it is far from that. Our experience was very unpleasant, involving us being sent a damaged machine, and after that, as a replacement, a machine so poorly constructed that it never once functioned properly. The hose for the pump was not even the correct hose and leaked air so it never achieved a vacuum. Then, a cable inside turned out to be the wrong cable. We had to submit a claim to the BBB before our concerns were taken seriously and we could finally get a proper refund. Beware - if you order and even try to use the machine, it voids the return/refund policy. It could quit one week after you get it, having used it only once or twice, and you'll be stuck with it, no refund possible. They'll try to help make it work again, but as we found, working with their customer service is a very protracted and nerve-wracking experience. The amount of food we lost trying to get the machine to work and the time we wasted on trouble-shooting was very frustrating. After 3 months, we finally got our money back.
