Shaun, there are only two veggies that I detest, and lima beans is one of them.
My recommendation to you is to toss that soup right down the garbage disposal. LOL

Camp, I too cannot stand butter beans from a can nor frozen, these are just as terrible and overly large and tough as the green peas found in tv dinners, yuk. Wayne, thanks for the Fordhook bush tip but my bush days are over except for snaps (green beans) which is the best way to freeze large fresh batches at once. My back ain't what she used to be so my days bending over to pick BBs is behind me. Last year while I was expecting a dismal repeat of King of the Garden limas I planted Butter Peas bush variety as a back-up, these were productive and tasty but way too much effort bending over to harvest. Sticking to pole picking. PN, wonder what the heck happened to Sieva seed beans? If King of the Hill seed wasn't offered around here we'd have zero pole varieties on the market today. Wish too that I had saved some Sieva seed :(

Freezing will always soften and greak down fibers in vegetables. Peas, corn, beans, and a few others in soups will hold up a bit better to freezing. Things like peppers and onions are also good for freezing soups. Pressure can the tender veggies in soups. If you know wht veggies get soft after a freezing, try not using them in a soup, or add them raw to the cooked soup, then freeze. That will help them keep their shape a bit better as they only see a single freezing and reheating.

I'd like to freeze the stuff before the use-by date arrives. I bought too many containers at a bargain. It's good stuff. I wouldn't like to chuck it. I tried to email Knorr my question. Trouble is before you get to asking the simplest question you need to fill in a LONG questionnaire with too many personal details to my taste. I'd rather not. Learned soup recipes from my grandmother. Split pea or navy bean have pretty much identical recipes except for the beans?!? A real ham bone is optimal, but smokey turkey wings/legs will do... anything with a really smokey flavor. Bone iin pot, lots of celery/carrots/onions, bay leaf, S&P and a bag-o- bans of split peas. Then fill pot with water and simmer till "done". I don't remember her ever soaking them, just a 2-3 hour simmer on stove top till navy beans are soft and split peas pretty much disintegrate and become "Exorcist soup". Don't remember any thing that was a go-with for pea or bean soup, but she would make home-made bread when she made "Canadian Stew". Have NO idea where the recipe came from or why/if it's Canadian. It was basically veggie beef soup in LARGE pieces. Big hunka beef... like for pot roast, browned in pan to start. Whole small onions and carrots & celery cut in 2 pieces. Some sort of potato something (sauce, paste, stewed), all covered with water and simmered till everything was cooked to death. OH, potatoes too, but they didn't go in until maybe last 20-30 minutes. All the meat and veggies got pulled out and served on a plate. The YUMMY broth in a bowl or mug. And the homemade bread (with butter) for dunking.

Yes, it will freeze. I just saw the pic of it on the WFD thread. I think it looks really good but then, I like lima beans.

I love Lima beans! I buy them dried and frozen, although I've never had leftovers to freeze. Since they sell frozen beans that are great, I would think the soup would freeze also. I freeze all types of cooked beans, including hummus and my Texas bean dip. Today and yesterday I made burritos with my bean dip, turkey breast, and Mexican Manchego cheese on whole wheat tortillas. It's possible that the Mexican Manchego cheese disagrees with me, but I made them mostly for DB's lunch. I've been trying to find Chihuahua cheese here, but Mexican Manchego is the closest I can find - and it appears to be very similar to Jack - although less upsetting to my stomach than Jack. It's nothing like the Spanish Manchego I get that is hard and made from sheep's milk.

Sherry! Hahahahah!!!! That's it. I'm sending you lima beans. You bad girl.

This soup is amazingly good. If I dont say so myself! I'd like to freeze it and serve it on Easter.

No one in this house eats them except me. And I'm not about to eat a whole pot of them by myself! So I'll share with family during Easter.

Because they are good! LOL! I LOVE them. Yes they should freeze OK. I buy cleaned fresh limas from my Farmer's Market during summer time and freeze them in ziplocks to have throughout the winter time and they are great.

Ah dontcha just love how threads digress from the OPs intent. Adds a certain 'flavor' to the forum, ar ar ar.

Sounds like enough people have given her the answers she wanted so I won't add.

I've used Limas as a base for sauces and purees (not unlike Lori's White Bean dip). By themselves, I find them bland, but throw them in the FP with other ingredients and some pretty good stuff happens.
