I was just doing a search for an enchilada sauce recipe, and found a couple of posts where you talk about a recipe you canned. I can't find the recipe, though. Care to share?

Thanks! We have a giant enchilada feast every Christmas, and I'd love to make enough sauce to can some for later.

Sure - I tried a "Search" too, and couldn't find it. But I made a copy at that time, so here it is. Incidentally, I puzzle at doing a pressure canning of 35 minutes at 10-11 lbs. pressure - but I know not to argue with the experts on this forum.

Enchilada Sauce for Canning:

10 or 12 whole dried anchos.
3 cups hot water
1/4 c. tomato paste
1 clove garlic- minced
1/4 c olive oil (I added later after opening).
1-1/2 tsp salt
1 tsp oregano
1/4 tsp cumin.

Toast chilies for 3 to 4 min in 400 degree oven.
Soak for 1 hour in hot water after removal of stems and seeds.
Put in blender and whirl until smooth.
Add remaining ingredients and simmer 10 minutes until blended.

I didn't note the jar head space, but I will guess - 1/2 in.
Process - Pressure canner 35 minutes at 10-11 lbs. pressure.

Makes 3-1/2 cups.

I grew quite a few ancho peppers this year, and also bought a dehydrator. The peppers were cut into fine strips for easier drying and to eliminate mold build-up that can form in larger - or whole pieces. I'm sure, however, this should not affect the recipe. As they ripen, I dry them and as soon as there are enough - will make another batch. I also add some hot Thai peppers - to my taste when I make my enchiladas.

Be sure to omit the olive oil tho - as that would be a no-no, so add later after opening for use.

Thank you! It sounds wonderful. We grew a ton of anchos this year, too, but don't have a dehydrator. I think I'll be trying to pick one up on Craiglist before summer, I never thought of drying the chiles that way (we froze ours).

Now if I can just get up our snowy, icy hill to the store, I just might be able to get cooking.

I finally decided to try a bunch - drying them in a 170 degree oven with the door slightly open to let out moisture. It took a couple of days, but worked OK. They were a bit sour - but after drying, I put them in a canning jar, sprinkled sugar on them and put them in the freezer. The sugar really helped make them more palatable. Now I know the meaning of the words "sour grapes" - because they really were. I think they will be fine added to some baked goods - such as zucchini bread. As long as the mylar balloons were still scaring off the squirrels, I left the other bunches on the vine. You are so right about the grape productivity. It really took off this year, and the vines are all over the arbor. I pruned it drastically - so I thought. Looking forward to future years and, hopefully, lots of nice pickings. A 2nd vine - a Chardonnay type - is just now starting to produce, and if I can somehow keep the summer fogs from harming it - should be seeing some nice fruitings there as well. Actually, it isn't my method. I found the recipe right here a few years ago. Perhaps it has "run" off the "Search" by now. However, here it is - and it seems to be working quite well for me: Sauerkraut in a Jar. Shred cabbage with a mandolin - long thin shreds. Pack firmly in jars - I've used pint or quart sized canning jars (Kerr or Harvest types), or larger glass jars with wide openings. One reason for the method is because I grow my own cabbage, and it comes ripe in small amounts - so I make it whenever I have enough. With each pint add 1 tsp of salt (Kosher for mine), for a quart, use 1 tbs of salt. Pour boiling water over the salt in the jar to fill. At this point, I fill a "baggie" made of salt brine to put on top of the jar - to close the top, it can also be used to replace any loss of brine later. The jar is then placed in my pantry to ferment. I usually close off the light. It is room temperature in my pantry. Depending on the weather and temperature, the kraut will ferment. I had a jar working in my pantry since July 3rd and decided I'd put it into the fridge today to stop the ferment. A taste test told me it needed a bit of vinegar, which I added to my taste. At this stage, I sometimes can it, and will refer you to the "book" for this, so you can decide on your method, as it can vary as to the "preferred" way. In the past, I decided to: Drain the kraut (stainless steel collander). Boil the juice. Pack the kraut in sterilized jars and pour hot juice over kraut. Process in a BWB. I suggest that you consult the newer information on processing - as there are several ways to do it, depending on what you want the end result to be. Zemmaj - Hi Marie: I'm glad I tuned in today or would have missed your post. That sounds like a wonderful recipe. I do have quite a lot of citrus and raise a few bees as well, so that should work into our pantry saves very well. This should work well for orange and limes too, I would presume. Perhaps even mandarins - which ripen around X-mas time and the tree is always so loaded. It is sometimes hard to find ways to use all of the fruit. I know what you mean when you say folks really like the homemade kind - we are really appreciating the taste of the finer foods in life here now - since I retired, there is more time to spend producing it. We truly enjoy all of the fresh things from the garden. Though I've never entertained any serious ideas of working out of my kitchen personally - most of us in the family have worked around food at some point in our lives, so wondered how others manage to compete in that field. Restaurants can be very profitable - especially in tourist oriented places, but quality is always a big factor - when there are seasonal problems. I do have the Stocking Up III book - and apparently missed this recipe. Sorry about that, but nice to talk to you anyway. Would appreciate hearing about your "ventures" - keep us posted, please. You could have just tacked this on to that thread so all the info would be together but Bejay said The light green could be fermented with a simple brine, garlic and a small piece of hot Thai-type pepper, in jars with brine bags on top to prevent scum and mold - allowed to "ferment" in a fairly warm room (70 degrees), until bubbling stops and taste test for doneness Is that what you want more info on? It basically just the instructions for the fermented pickles at NCHFP only using green tomatoes instead. Leave out the dill if you wish. I sort of miss the snow at this time of year, as I grew up in the midwest. It was a bit difficult to get used to the idea in our warmer climate. Once in awhile, we go over to the desert in winter - to get away from the rain and cold here - sometimes passing through the local mountains, where they do have snow. It is hard to drive in it, when your not used to it.

Oh, Bejay, I'll send you some of our snow here! We had 4" on ground, got another 10" Friday, and tonight expecting 6-8" more! And this is just the first full day of winter! UGH! Imagine waiting for all that to melt off in the spring!

I'm in western Washington, and we get snow maybe once or twice a year. Never this much! We have about 14" on the ground right now, and I am ready for the rain to come back!

We got two BIG storms a day apart. Its now over 2 feet deep, and on Christmas we are supposed to be getting rain and 50 degree temps. Not sure what will happen with all that snow thats hardened up solid, but expect it to be very messy. The roads here are hard packed slick surface icy snow with many ruts. If you drive over 25-30 mph, you risk destroying a cars suspension. There was a major accient just 1000 feet from me, and it stopped traffic almost an hour. One car had gone off the road and landed in a big swampy area next to the narrow road. Speeding was the cause.

Take it slow in snow!!

We're at the bottom of a big hill, and the only way out is up the hill. This morning the plowing/sanding truck got stuck, so I guess I'm not going anywhere today!

I have relatives in Seattle, and they called us here in Toronto yesterday to say "Thanks for lending us your weather---now would you please take it back!" Hope you and yours stay safe. Happy enchilada sauce making! Bejay's recipes always rock.....
