Applesauce gurus: boiling applesauce?

How in the world do you get your applesauce to 212 F without covering yourself and the kitchen with sputtering applesauce? My BBB calls for bringing the applesauce to 212 F and MAINTAINING that temperature while filling the jars. As far as I can tell, this is impossible as I can't stir, fill, get air bubbles out, and shield myself from flying applesauce all at the same time. The NHCFP site only specifies that the applesauce needs to be brought to a boil and then kept hot while filling. I check with a thermometer and I was only in the range of 180F, but it sure felt hot when it hit my arms. I processed it for 20 minutes in a BWB. Do I need to keep these jars in the fridge to be safe? TIA!

BTW I hope this isn't too similar to the previous post about how you cook applesauce, I thought this was a separate idea.
