another 'can I can this' question

disneyaddict

ok, my husband and son love caribbean jerk hot sauce, so I tried to modify the Ball's sombrero barbecue sauce (page 261) (keeping the ratios, I think) to work for Caribbean jerk, but I need more dried herbs than the sombrero sauce calls for--

here's my recipe- I tested it- for the taste- can I can it??

14 cups tomatoes (chopped, peeled, pureed, seeds in)

44 ounces tomato puree

6 ounces tomato paste

12 habaneros

2 1/2 cups onions

3/4 cups carrots

1 cup parsley

1/2 c. tamarind paste

5 garlic cloves

2 T. fresh thyme

3 cups sugars- I used mostly brown sugar, with a little white sugar, and 1/4 cup corn syrup

3/4 cup cider vinegar

1 cup white vinegar

1/3 cup lime juice

1/2 cup lemon juice

4 T. ground allspice

2 T. ground ginger

2 t. ground nutmeg

4 T. freshly ground black pepper

2 t. salt (or to taste)

4 t. cinnamon

1/2 t. cloves

Thanks for any help.
