Peach Mustard Dipping Sauce

My son was in need of comfort food (just put to sleep a 16 year old dog), and asked for fried chicken with apricot dipping sauce (damn the calories, full speed ahead!)

The apricot sauce is simply 1/2 a jar of apricot jam, melted, with a couple of spoons of Dijon mustard stirred in. It is delicious and tricks folks into thinking you've been cooking all day.

Oops. No apricot jam, and it really wasn't the best day to tell him he couldn't have what he requested for dinner. But, what the heck, I know how to make jam and I've got frozen peaches.

Here's what I came up with, and it was delicious on chicken fingers, fried zucchinni, and batter fried onions.

A good substitute for apricot mustard dipping sauce

Peach Mustard Dipping Sauce

About 1 1/2 cups fresh or frozen peaches

1/2 cup sugar

3 T finely minced onion

Simmer to thicken, then add

1 teaspoon cider vinegar

2 spoons of Dijon mustard (to taste)

I planned to whirl it in the food processor, but it came out smooth enough by the time it was reduced and thickened.

It was very easy. The peaches had enough juice that I didn't even have to stir it until the very end.
