Substituting vinegar for lemon juice?

Lots of canning recipes call for lemon juice but I am allergic to citrus. So far I've limited myself to recipes that call for vinegar instead. Is is possible to substitute vinegar for lemon juice safely? There's a great recipe for an apple ginger sauce (apples, ginger, brown sugar and lemon juice) that I'd love to try. But I know you're not supposed to change recipes. Anyone know about this?
