green tomato chutney recipe. safe?

Is anyone familiar with Mark Bittman's recipe for green tomato chutney from "How to Cook Everything Vegetarian"? It is not specifically a canning recipe... Quantities would need to multiplied.

1/4 c unsalted peanuts

3 T butter or peanut oil

2 t black mustard seeds

1 t coriander seeds

1 large red onion, cut into 1/2" pieces

salt

2 large green tomatoes

It seems like the overall cooking time is less than 10 minutes, so processing time would have to be long...?

I know it's always best to stick with approved recipes, etc...Just thought I'd ask...
