Freezing figs for jam later?

Can I freeze figs to make jam with later? I know I have a recipe (somewhere) for a jam or spread with dried figs, but a friend has access to a few trees that are currently loaded with ripe fresh figs (brownish with a pink flesh) that I can't can right away.

And off topic: is there some way to easily locate threads I'm subscribed to? I'm having trouble following up some of the things I've posted.

As to figs (brown turkey), a few of mine are now ready to pick. I had issues with them two years ago as they were so ripe that a few went moldy quite fast after being picked. I dried most of mine that year and then placed them in a zipper bag stored in the vegetable crisper. That was TWO YEARS ago, and I never got any figs last year as I was in the hospital 17 days, and lost every last fig due to no watering. This year I must have at least 75 figs on that little tree and it drinks up almost 2 gallons of water daily! It sits in a huge 2'x'2' square pot that now weighs over 85 pounds. I can't handle it amymore, so I have to plant it outside and hope it will survive winters here.
I plan to make fig squares with mine, and this years will ge tfrozen whole until all are ripened and picked. Then I will rehydrate the dried ones and use lemon juice in them. and make a big batch of fig fillng. If all goes well, I may end up freezing some fig squares too.

Yes, you can freeze figs to use for jam later. I'd recommend you weigh or pre-measure the figs before freezing and mark the source for the recipe on the outside of the bag. It simplifies things when jam-making time comes.

APRICOT STREUSEL COFFEE CAKE 1 (6 oz.) pkg. dried (or equal amts. fresh) apricots, chopped Boiling water Streusel (recipe follows at end) 1 3/4 c. flour 1 c. sugar 3/4 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 3/4 c. butter, softened 2/3 c. sour cream 2 lg. eggs 2 tsp. vanilla In bowl cover apricots with boiling water. Let stand 5 minutes. Drain, place on paper towels, set aside. Prepare streusel, set aside. In large bowl, sift together flour and next 4 ingredients. Add butter, sour cream, eggs and vanilla. Using mixer at low speed, beat until moistened. Increase speed to medium, beat 2 1/2 minutes. Spread 2/3 of the batter into greased 9 x 9 x 2 inch baking pan (9 x 13 inch works fine). Toss reserved 3/4 cup pecan mixture from streusel with apricots; sprinkle over batter. Spoon remaining batter over apricot layer, spread evenly. Sprinkle with streusel crumb mixture. Bake at 350 degrees for 55 minutes or until toothpick inserted in center comes out clean. Cool in pan. STREUSEL: In bowl, mix together: 1/2 c. brown sugar 3 tbsp. sugar 1/2 tsp. cinnamon. Freezing Strawberries for Jam

Measure the amount of strawberries needed for a batch of that jam. Add the sugar required and freeze. Make a note on the bag of the recipe source. That way everything is pre-measured and all you have to do is thaw. There can be a slight "flattening" of flavor with frozen fruit, but the sugar will reduce that. In a strawberry jalapeno nobody's likely to notice. In the plain strawberry you can add a bit of lemon juice if you'd like to perk up the flavor. Otherwise frozen fruit works just fine for jam. Carol

My 12 fig trees died way back from several snow falls and very cold temperatures for longer than normal this winter. Global warming is also global cooling, ya' know. They are beginning to show little fig babies on the new growth but trees are half the size they were. It is probably a good thing since they were getting way too tall to pick fruit from easily. At least I will know where to prune = everything that is black! As for the fig refrigerator jam, I'd add more lemon juice to each jar since figs have a very high pH relative to other fruits. You could then keep it longer, if it isn't consumed within a couple of weeks (or like days at my house). If you have lots of figs, make some honey, fig and walnut tart/cake. It freezes really well (wrap in aluminum foil or FoodSaver bags after freezing uncovered for a day). Jam will be a little different than jelly. You are going to strain the fruit for jellies, because you want them clear and devoid of solid material. You want jams to contain a high fruit to juice ratio. I assume when you are talking grapes, you want the end product to be jellies and not jams. I don't know how freezing would affect trying to make jam or preserves of it, I just know that since all's you want are the liquids freezing and the ultimate cell rupture doesn't hurt jellies you make from them.

I just picked eight ripe ones and placed them in my dehydrator. I need to gather them all up once ripe and make a nice big pan of fig bars.

Thanks so much. After 4 seasons of nothing but hard green figs that got frosted every fall before ripening, I gave my tree the heave this spring. It was supposed to be some "super cold hardy" variety, too. Shouldn't have purchased it from a West Coast grower, I guess...

Now off to beg for figs! I will definitely find a recipe and measure before freezing--thanks for the reminder about that!

P.S. Do you mind sharing your fig bar recipes?
